Cheese Spinach Bake
Crustless = fewer carbs...think about it.  It also saves time in the prep process.  Instead of using time making a crust, just grease the baking dish and have at it filling it with scrumptious ingredients that are healthy.  Try this one and see what you think...
1 lb. Italian vegan sausages, check ingredients list for no added sugar!
6 eggs, whisked
dash salt/pepper/garlic powder  
3 c. fresh spinach, chopped
1 c. ricotta cheese  
1 lb. mozzarella cheese, grated
Preheat oven to 375 degrees.  In a large fry pan, heat sausages through.  Cut into 1″ pieces, add to greased baking dish.  Add seasonings to eggs, set aside.  Layer spinach on sausage, then ricotta and mozzarella layers.  Pour eggs over all, covering well.  Bake for 1 hr. + or until knife inserted in center comes out clean.  Serve with a crunchy green romaine salad as contrast to this creamy main dish.
