There are so many things that I want to make for dinner, but one of my roommates has a gluten allergy and I don't want her to be sad that she can't eat what I make

#anntics #most of what I make involves gluten #i can get gluten free lasagna noodles but the sauce I make for it uses a roux #and I'm not sure what I can use instead of flour for that?#and I don't think I can acquire gluten free phyllo dough so I can't make spanakopita #maaaaaaan I want spanakopita though
