Making kachori dough.
In a large bowl, put flour and salt and mix very well. Add oil. Using your fingertips mix the oil with the flour for a few minutes till you get a breadcrumb-like texture in the mixture..
Add water in parts and knead the dough till soft. Cover the dough with a moist muslin or kitchen towel and let it rest for 30 minutes..
MAKING GREEN-GRAMS STUFFING FOR KACHORI.
Drain all the water from them green-grams and mash them..
On low heat, put a large pan and add oil. Keeping the flame to the lowest flame, add all the spices and sauté. Make sure that the spices do not burn..
Add the mashed greengrams. On a low flame mix very well. Saute with non-stop stirring for 3 to 4 minutes on low heat. Pour the stuffing in a tin and let it cool down..
Make small balls from the green-grams mixture. Spread some oil on your palms while making the balls. Keep aside..
Stuffing and making kachori.
After 30 minutes, lightly knead the dough. Roll the dough into a log and cut the dough in equal portions..
Take a portion of the cut dough and flatten it with your fingers. Keep the edges thin while flattening. You can also use a rolling pin (belan) to flatten. Place the green-grams stuffing ball on the dough..
Bring the edges of the dough together and join them at the center. Pinch of the excess dough..
Stuff and prepare all kachori this way. Keep them covered under a moist muslin or cotton cloth, so that they do not dry up..
Frying kachori.
On low, put a frying pan with some cooking oil. When the oil is just hot enoug, fry the kachori. When the base becomes light golden, then gently turn them over. The frying takes about 7 to 9 minutes. So one has to be patient..
Continue to fry on a low to low-medium flame until they are golden brown. Turn them often to get an even color..
Place kachori on kitchen paper towels so that excess oil is absorbed..
Fry all kachori this way..
Serve the kachori warm accompanied with some fried & salted green chilies, tamarind dates chutney and green chutney. You can also serve them with chili garlic chutney or curd.

This is definitely the best Indian punjabi samosa you’ll every make at home! I’m arming you with step by step directions and a recipe video for you to follow. So you can learn how to make the samosa dough, the aloo stuffing and how to easily wrap them. I don’t make tall claims easily but I think I’ve been looking for the best Indian punjabi samosa recipe all my life. Because I’m a samosa lover. More like an obsessive samosa lover with an irresistible need to have samosas every week because I think they are the most epic Indian snack ever invented! I mean who can resist flaky samosa pastry, stuffed with a spicy, mouthwatering aloo (potato) filling thats deep fried till golden? Not this girl! And I think these homemade punjabi samosas can give any store bought samosa a run for its money. In fact, some store bought samosas get it so wrong that it’s unbelievable – the stuffing is not appetizing enough, or the pastry is not fried properly. Because making good samosas is an art and needs time and patience, so I don’t have any shortcuts today. Because the best Indian punjabi samosas don’t deserve them. They deserve to be made with love and care and patience so that when you take that first bite you are transported back to your favorite childhood mithai shop.

If you’ve never attempted samosas at home before, I think it’s time we all start. And if I can do it, so can you. Because I’m the least arty person I’ve ever met. Origami was never my thing and wrapping samosas is a bit like that. It takes a few tries, but once you get it, you’ll be wrapping them like a boss. I have a step by step video recipe if you scroll down, that’s going to make things even easier. Because I want this to become the definitive guide to making homemade punjabi samosas, let’s just answer some questions that you may have.
Which flour can you use to make samosa?
Samosa is traditionally made with all purpose flour or maida. But you can swap in some of the maida for whole wheat flour (atta). All purpose flour provides flakier results, and whole wheat flour samosas will result in a denser samosa pastry, but they still be very tasty!
Can the samosa filling be made without onion and garlic?
The samosa filling recipe that I have does not have any onions, but I do love adding garlic. However, if you don’t like garlic or don’t eat it, feel free to skip it and replace it with a pinch of asafoetida right in the beginning after you heat the oil.
Can the samosa dough be made in advance?
Yes, and it should be. You will always get better results when you make the samosa dough in advance and keep it covered for 30-40 minutes. This helps form the gluten in the dough and the resting time gives you better control while rolling the dough.
Are these samosas vegetarian or even vegan?
These are the best Indian punjabi samosas and they are vegetarian. Infact these samosas are also naturally vegan like a lot of Indian cooking, so if you are looking for vegan festive options, these will please you!
Can samosas be baked?
Yes, samosas can be baked in general. Though I believe deep frying provides the best results, and when you are enjoying something like samosas, you should stop worrying about it being healthy and just indulge. To bake these, the amount of oil in the dough will need to be increased to give the same flaky results, without making them overtly oily. I’m testing a baked samosa recipe and if I’m happy, I will put it up soon!
Can samosas be made in the air fryer?
Absolutely! My mother has tested these samosas in the air fryer with great results. They will need to be brushed with a light coating of oil before being air-fried but the result is pretty yummy. They may not have the perfect, even golden brown crust but the pastry is cooked through and its quite crispy too, just like a good samosa should be.
Can the best Indian punjabi samosa be made in advance?
Yes, you can easily make these samosas in advance and refrigerate them for about 6-8 hours. Or you can individually freeze them and store them in a ziplock or a freezer friendly container and fry them at a later date. If freezing these, make sure to thaw them at room temperature for about 15-20 minutes before frying.
How long do samosas keep?
I have never been able to keep samosas for more than two days because they always get over before that. In fact I love cold samosa and make them into a samosa sandwich or samosa chaat. You won’t believe how good samosas can taste between two slices of bread slathered with ketchup and coriander chutney. Whoa! I know thats a lot of questions but those are all the questions I had when I started making samosas. My favorite way to serve samosas is definitely with ketchup, but you can always serve these with coriander chutney or tamarind chutney, or turn them into a samosa chaat with all your favorite toppings. Ingredients Samosa Dough 2 cups Maida 2 tablespoon Vegetable Oil 1/4 teaspoon Salt 1/2 cup Water + a few tablespoons extra Samosa Filling 2 tablespoons Oil 1 teaspoon Coriander Seeds 1/2 teaspoon Saunf (fennel seeds) A pinch of Methi Seeds (fenugreek seeds) 1 tablespoon Ginger Paste (freshly ground ginger) 1 teaspoon Garlic Paste (freshly ground garlic) 1 teaspoon chopped Green Chillies (or Jalapeno) 2 teaspoons Red Chilli Powder 2 tablespoons Coriander Powder 3/4 teaspoon Turmeric Powder 1 tablespoon Raw Mango Powder (Amchoor) 1/2 teaspoon Garam Masala Powder 2 large Potatoes, boiled, peeled and mashed 6–7 Curry Leaves Salt to taste Oil for Frying Instructions Samosa Dough: To start making the samosa dough or pastry, mix together flour and salt and add oil. Rub the oil with the flour till it resembles bread crumbs. Start by adding 1/2 cup water and knead it into a firm dough. You may need a few extra teaspoons of water but add as you go. The consistency of the dough should be firm and smooth. Cover the dough with a damp cloth and set aside while you make the filling. Samosa Filling: Heat oil in a pan. While the oil is heating, crush the coriander seeds, saunf (fennel seeds) and methi (fenugreek seeds) roughly and add it to the pan. Fry the spices till aromatic but be careful not to burn them. Add ginger, garlic and green chilies and stir fry for a minute or two. Add the remaining spices, mashed boiled potatoes and salt. I like to use a potato masher to just mash everything together and then mix it. Add the curry leaves right at the end, give it one more good mix and then set the mixture aside to cool. Wrapping the samosas: Take a lime sized bowl of dough, roll it between your palms till smooth and dust it with flour. Roll it out into a circle which is less than 1 mm thickness and about 6 inches in diameter. Cut the rolled dough in half. Pick up one half and brush it with a little water along the straight edge of the pastry. Now take one edge of the straight side, and place it on the other edge of the straight side in such a way that the dough forms into a cone (watch the video for more clarity). Pinch the corner of the cone so that its sealed. Place a tablespoon and a half of the filling in the cone, making sure to fill it only 3/4th of the way. Brush the inside of the unfilled dough with a little water and seal it by pinching the edge together. Repeat till all the dough is used up. Place the samosas on a greased tray making sure they don’t touch each either and cover them with a damp cloth. Frying the samosas: Heat about 2-3 inches oil in a pan. To test if the oil is hot enough, add a tiny piece of dough to the oil and if it bubbles and floats on the surface, your oil is ready for frying. Add the samosas to the oil making sure not to overcrowd the pan, and reduce the flame to a simmer. Fry the samosas on a low flame till golden brown on either side. Its important to fry them on a low flame, or the pastry would be raw from the inside and golden brown on the outside. Half kg raw chicken, preferably boneless and curry cut
For the marinade:
2 teaspoon red chilli powder
2 teaspoon ginger garlic paste
2 teaspoon lime juice
2 teaspoon salt
1 cup curd
½ teaspoon garam masala
1 teaspoon kasurimethi
2 teaspoon mustard oil
For the gravy:
2 teaspoon cooking oil
Butter cubes, you can use Amul cooking butter
3 cloves
1 cinnamon stick, one inch
1 teaspoon mace
7 pods of cardamom
4 chopped tomatoes
1 teaspoon garlic paste
1 teaspoon ginger paste
1 and ½ red chilli powder
1 teaspoon kasurimethi
2 teaspoon honey
1 green chilli
2 teaspoon cardamom powder
1 tablespoon of heavy cream
Preparation
Start with the marinade: Take a deep bowl and mix together the chicken along with the ingredients for the marinade. Massage the marinade ingredients well into all the pieces of chicken as the coating is important for the flavour.
Keep the marinated chicken in the fridge for about 20 minutes.
After this time, take it out of the fridge and roast the chicken.
Next, cook the gravy: Now set your half cooked chicken pieces aside and take a fresh pan and place on heat.
Add a few cubes of butter along with oil to this pan.
Put in the cloves, cinnamon, mace, cardamom and saute well.
Next, add in the ginger garlic paste and the chopped tomatoes.
Make sure this is cooked well, then remove from flame and cool slightly.
Grind this mixture to form a smooth paste.
In a pan, heat two more butter cubes and add garlic and ginger paste.
Now, cook the puree made in the grinder.
To this, add the red chilli powder, kasurimethi, honey and mix well until the masala separates from the oil.
Next, add in the chicken pieces. Allow it to cook.
Add the green chilli, cardamom powder and the heavy cream.
Serve hot with a dollop of butter over it!
Tips
Serve with roti, naan or some steamed basmati rice.

Preparation
Take a pressure cooker and add one tablespoon oil. Place on medium heat. To the hot oil, add the ginger garlic paste, chilli powder, coriander powder, turmeric powder, pepper powder and fry well till the raw smell disappears. To this, add the chicken pieces. Fry the pieces till cooked, which will take about five minutes. Next, add enough water and place the lid. Allow the chicken to cook with 3 whistles.
In a separate pan, add 2 tablespoon oil and heat. To this add the chopped onions and fry until the colour of the onion turns brown. To this, add chopped tomatoes until the tomatoes become pureed. Now, add the garam masala powder, coriander leaves and stir well until the oil separates from the masala.
You can now add the pressure cooked chicken to this mixture and fry for another 10 minutes. Remove from heat and serve.
Tips
Serve as a starter item, or as a side dish with biryani. This is also a great side dish to have with a drink or two!

Half kg raw chicken, preferably boneless and cut in small pieces
For the marinade:
1 egg, beaten well
½ teaspoon ginger paste
½ teaspoon garlic paste
½ cup corn flour powder
Other ingredients:
½ teaspoon salt
2 tablespoon chopped green chilli
2 tablespoon vinegar
½ cup sunflower oil
2 cup chopped onions
1 tablespoon soy sauce
½ cup chopped spring onions
Preparation
Start with the marinade: Take a deep bowl and mix together the chicken along with the ingredients for the marinade. Pour some water into the bowl so as to coat all the pieces of chicken with the batter.
Keep the marinated chicken in the fridge for about 1 hour.
Prepare the chicken: Take a deep kadai or wok and heat the oil.
Place the chicken pieces into the oil carefully so that they are cooked completely.
Once fried, remove the chicken pieces from the oil and place on paper napkins to remove excess oil.
Now, take another pan and heat about 2 tablespoon of oil in it.
Fry onions in this until they turn transparent.
Add green chilli and fry well.
Next, add in the soy sauce, vinegar, salt and the cooked chicken pieces.
Mix well so that the chicken is well coated.
Add spring onion and sesame seed and then remove from flame.

Preparation
In a non stick pan, dry roast the coriander seeds well.
Once the seeds begin to crackle, remove them from the flame and crush them properly.
Next, take a pan and heat the oil in it.
Add red chillis and fenugreek seeds and saute for a minute.
Add in the onions, cook till the onions lose colour.
Add in the garlic and saute to cook.
Add in the ginger paste, coriander seeds, red chilli powder and coriander powder.
It is now time to add in the pieces of chicken.
Mix well and then add in the chopped tomatoes. Cook this for about 3 minutes.
Add in dry mango powder, garam masala powder and the salt.
Close the pan with the lid to allow the chicken to cook for 10 minutes with constant stirring.
Next, add tomato puree, coriander leaves and cook.
To this, add in the capsicum, tomato, ginger and green chillies.
Mix well and add in the milk. You can also add in the water to give the kadai some gravy. Cook for a minute or two.
Remove from heat and serve!
Tips

Place in the fridge for 30 minutes to marinate.
Take a bowl and mix together all the second marinade ingredients.  
Next, mix in the third marinade ingredients in the same bowl.
Add in the chicken and mix well.
Place this in the fridge and marinate it overnight.
Preheat the oven to 200 degrees Celsius.
Now, take some skewers and place through the chicken pieces.
Place over a pan and place in the oven to cook for about 30 minutes.
Keep turning over the skewers at regular intervals so the chicken browns properly on all the sides.
Remove from oven and brush with butter, and serve hot.

3 cups whole wheat flour
1 cup refined flour
2 cups water-to knead

1.Mix the wheat flour and refined flour together, and knead into a soft, sticky, dough.

How to Make Instant Rava Dosa recipes super suvai tamil
1.Dice / Slice up the vegetables keep aside in a bowl.
2.In a big mixing bowl add rava, rice flour, all purpose flour and water. Mix well. Keep aside for Half an hour.
3.After half an hour add the onions, green chillies, cilantro, cumin seeds, coconut pieces and salt. Mix well.
4.Take a large non-stick pan on a medium flame and and apply some clarified butter on the surface, and wait for it to get hot.
5.Once hot using a ladle start pouring the batter from a little height.
6.Now fill the large holes with the batter. Pour a little oil on the outside of the dosa.
7.Once you start seeing the edges getting brown use a sharp edged spatula and make sure that the dosa is not sticking to the pan.
8.Now turn the dosa and cook the other side for ½ -1 minute.
9.Once cooked using a spatula remove the dosa from the griddle or pan and place it in a plate.
