Who are you favorite gods in DnD?
Hmm. Depends on the setting tbh!
But in the Forgotten Realms:
Ilmater is probably my favorite "good" god because he is one of the few that actually does what he says he will do. He's a defender of the defenseless and the suffering, children, and people without hope. He is mostly a proponent of non-violence until violence is necessary in the face of cruelty and oppression, at which point he is maybe top 3 most fearsome gods in the entire setting. He opposes like twelve different evil-aligned gods through sheer compassion. He's got some absolutely bonkers lore due to being part of the Triad alongside Tyr and Torm, too.
Lolth because she is the ultimate in awful, awful goddesses; if you think Shar is bad, you've not dug deep on Lolth and drow. Truly one of the most heinous things in all of the Realms. Also I like her aesthetics...
Selûne (shock and awe) is one of my favorites as well, just because she is very caring in a hands-off way that I appreciate a lot. Plus, she has all sorts of strange lore about becoming a tavern-keeper for years and years and maybe also being her own sister. Good classic mythological weirdness.
Fun note: as much as I love Asheera, Gond isn't really one of my favorites. He's great, for sure, but he's also gotten very little lore over time and a lot of it is pretty expected stuff for a craftsman/inventor god.
He's fun in an "I can stake my claim here and add stuff" sorta way.

She really is goals lol. I wish it was that "easy."
So, in the Forgotten Realms setting it's canon from on high (the setting's creator) that divine transition is actually one of the EASIEST ways for trans folks to transition! That's one thing I love about the setting: a very weird old hippie answering people on Twitter and giving everyone canon lore like in-world terms for trans folks (alun is Elvish and dezek is Orcish, for example!)
Really all it takes to petition for this sort of thing is some kind of devotion, gift, or promise to a chosen deity. If it's sufficient, they'll be blessed and remade like Asheera was.
Since the setting is polytheistic, anyone could theoretically seek out any god or goddess for this sort of thing. Most would try to ask their most favored god though, like Asheera did for Gond! Some are better at it than others though because gods in the Realms aren't perfectly omnipotent beings.
Anyways, all that to say that Asheera's paladin oath and religion have a lot to do with Gond "remaking" her. Almost literally like she was reforged. I don't know if I want to expand on that all the way since it might show up in fics, but yeah! That's the bottom line of it all.

Why Gond?
So, Asheera's father is a Gondian engineer so she already had a bit of a leaning towards him when she was growing up. Her mother is an orc who left every bit of her people behind, so all the religion came from Asheera's human side of the family.
Add onto it that she's naturally inquisitive, enjoys working with her hands, and worked odd jobs as a youngster before enlisting that included a smith's apprentice, she just naturally felt a kinship to a god of creation and tinkering.
Doesn't hurt that Gond, to her, is the most likely god to "remake her" in an image she wants with her transition.
Worth nothing, but she's like most people in the Forgotten Realms in that she'll give thanks to Tymora for luck or try to appease Umberlee on a ship voyage, but she ultimately leans towards Gond. Though 5E D&D doesn't require religion to be part of it, she does make her paladin's oath to him specifically.
There's a lot more to it, but that's for the fics :)
