Batch 18 | Black Tea Cider |  Brew day

More tea. 

I’m basically doing the same thing as batch 16. This time I’m calling it Black Tea Cider. 

Ingredients

3 qt apple juice

1 cup black tea

3/4 cup sugar

2 cups water

S-04 English ale yeast

I took a pH reading and found the acidity was a little bit high, which is why I added water. OG of 1.053. Fermentation took off. 

Simple stuff. Just a one gallon batch. But I will apply what works here to the upcoming turbo cider. And I am confident I will enjoy drinking it.

FIRST DAY WITH COMPLETE UNIFORM. Feeling like a legit Immigration Officer today cos they made us wear our badges and stripes. Such an exciting day to walk around all over the airport for no apparent reason but I didn’t do that cos my feet will hurt. . Not a fan of its weight cos I’ve gotten used to the plainness of just the black uniform but I do enjoy the confidence that will just emanate from you once everything is worn altogether and you feel awesome all day long. Okay, enough about that. I’mma get back to reality and will just keep doing my job better everyday. "Mr. Stark, I don't feel so good." 💔 . PATRIOTISM, INTEGRITY, PROFESSIONALISM. Oh, I definitely learned a lot during the Boarding Formalities under the Seaport Operations Section. It was a rollercoaster ride of emotions that was filled with endless contradictions that will just make you question what really is right and wrong. . It was a test of character, knowledge and skills for me. To be put in a position where I had to decide a passenger's fate, I chose the route where I was most comfortable with basing from what I've learned. It wasn't easy. HAPPIEST BIRTHDAY, BESHY ERIKA. First of all, I initally wanted to post several photos of us but this is the only photo I’m cute at so there’s that. Anyway, this baby girl was my first actual seatmate at the Philippine Immigration Academy. Her sincerity to help me understand thangs in the Bureau made me appreciate her patience with my never-ending questions about the hows, whats, whos and everything else in between pertaining to our work. . We clicked pretty fast because we hate the same people, CHOS. Our closeness grew as days went by as we shared personal stories and challenges of daily living in and out of work. Almost ten months of knowing her, we’ve had ups and downs, we’ve had hatred and love for each other but showed nothing but hugs and nasty unwanted kisses. . Separated for several months now at different terminals, we still manage to converse and she still tries to wake me up every now and then so I’d get up for work along with our other yummy set of friends, I love y’all to bits HSR. So much tears have been shed (by mostly her) in the short span of time we were together and I welcomed her every time with my arms wide open to wrap her with my warm embraces and words of wisdom. . Loving you always my Bureau Beshy. So glad to have met such a pretentiously sweet girl who is a nasty woman deep inside. I’m sorry but you’ll never get a taste of my yummy bod ever in this lifetime but you can always dream because dreaming is free and I can allow that. . SPOT ME. Probably one or two more flag raisings with these people and we're off to the aiports. It felt like forever in the beginning but it feels like it's too close to the end right now. Gonna miss this batch. Met such an interesting bunch of characters from all walks of life with varying personalities. Lifelong friendships has definitely been formed. . Such a wild thang we had to go through with all the lectures, exercises, activities, workshops and teambuildings. We had to endure all of that to get to where we are.
