The Rise of the Brooklyn Food Scene

Let me start my notes on this panel off with the fact that I want this book:
The Butcher's Guide to Well-Raised Meat
The author is wearing a t-shirt that says "Bacon gives me a lard-on." :)
Why is Brooklyn up and coming?
People in Manhattan wouldn't go to eat in Brooklyn previously, but it is turning into a hub for good food.
There is a real do-it-yourself attitude happening across the country. This is the spirit that informs the people on this panel.
Brooklyn offers a small town feel. The chefs & proprietors in the area all take care of each other and help out. It's a very open environment, rather than competitive.
Brooklyn flea market has become a young business incubator.
Space is cheaper there. People who live there are very interested in culture and food. It's very easy to be a business owner there.
How do you find your way into a social network in the area?
Generally the panelists don't utilize social media as much as other businesses. Meehan actually confessed to being afraid of it.
It's a great way to get closer in the people who are interested in what you do, get feedback from people on your food.
It really depends on the size of your audience. If you're a local restaurant, the reach doesn't need to be great. If you're creating a product that can be sold nationwide, you need to get more involved.
Social media also helps spread the buy local message.
What should you expect when starting a small food business?
You won't sleep. You will work really, really hard. You will be exhausted.
You have to learn how to do things yourself, like make a website, how to hire an employee, etc.
Stay true to your customers. Keep growing and learning. Push your product.
You have to stay on top of everything.
You have to remember that you're going to be a business person too. You can't always be in the kitchen. You have to find a balance.
If you choose to work with your SO, keep in mind that it's incredibly hard to separate work from business. You have to have the right personality to do it.
What inspires you?
Lack of butchers inspired Jessica. They reached out to old butchers who had kids that weren't willing to take it on. It's a dying art.
They brought something to people that they didn't have before.
Jessica & her husband have had to learn everything from new, which was exciting for them.
People on the panel are generally excited by the food revolution. Slow food is really hard work, but it's rewarding.
Erica Shea found there was a barrier for women to enter into brewing. It was a great challenge to push past these barriers.
Yelp Reviews
All of the panelists spend time understanding the problem and try to respond outside of Yelp. They have found that when you respond on Yelp, it's too easy to come off incorrectly and the 2 way conversation doesn't happen.
