A head canon for a character? Well, you told me to pick my own character; it's hard to choose so is it okay if I pick more than one?! Most of my favorite head canons are things I'm already writing, so here's a couple I'm not currently planning to write:

Remi (s3 spoilers): The "nun" in the season 1 flashbacks had nothing to do with Shepherd or Sandstorm - it was a test to prove she was black-ops material. Remi didn't have her SEAL tattoo in those nun flashbacks, and we know she enlisted straight out of school. To me the flashbacks paint a picture of Shepherd as a strict, cold bitch of a mum who was certainly running her home not unlike a barracks, but I see nothing to suggest she had her kids actively involved in criminal enterprises or murder while they were still in school. I think at some point Remi tried to become a SEAL, despite being a woman and thus barred from it by unwritten default. Carter's guy saw she had the potential, so he offered her a way around the misogyny that would have otherwise kept her out. Once she killed whoever the fake nun was and retrieved whatever intel was on that locked drive, she had passed and was in with Orion - she just needed to credibly wash out of SEAL training.

Boston (s5 spoilers): Post-series, Weller and Boston became unlikely buddies after discovering they actually have a lot in common, not least of which being the similarities between Jane and Rich. They both love cooking, and hang out in the kitchen together whenever "the thruple" visits Colorado, and Boston becomes unofficial co-host whenever everyone gets together at the Weller house for a meal. It becomes a bit of good-natured rivalry, too: Kurt thinks a potato ricer is a stupid and redundant piece of equipment - if you want rice just eat rice, and if it's gonna be potatoes why do you need something fancy and hard to clean when a good old fashioned masher will do the trick? - but a month after Thanksgiving, when he eats his own mashed potatoes for Christmas dinner, he's forced to concede that Boston was right about the bloody Robuchon potatoes.
