peak of season zucchini halved lengthways, scored crisscross on the cut side and fried both sides in a shallow pool of fresh green olive oil with the lid on for most of the cooking time, patted on a paper towel so they're not greasy, sprinkled with flaky sea salt, chopped into mouthfuls and eaten on a bowl of rice in the garden on a breezy summer afternoon. zucchini my sexy beautiful summertime girlfriend.

#this is lying i didnt have rice but itd be very good on rice if you have any.#the trick is that you want zucchini that is fresh and in season. you dont need to add much to it other than the olive oil and salt #it doesnt crisp but it gets nicely al dente in the pan and the cut side caramelises.#you could add a little soy sauce and mirin towards the end of cooking let it thicken into a sort of glaze #and sprinkle them with toasted white sesame seeds before eating #but personally when the veggies are at their peak im perfectly happy leaving them mostly plain so i can taste them themselves #anyway. zucchini my sexy wonderful girlfriend
