Since it is one of those days where I am unable to cook. I thought I would share one of my favorite recipes, not vintage exactly, but a family recipe, one of my moms. Unless is the 90s vintage now?
Anyway this one freezes well and makes idk 4 or 5 servings.
I like to prep a few things ahead on the days I feel well to have on days like today.
Enchilada Soup
1 can cream of chicken
2 cans of chicken broth, I used one bigger container of low sodium
1 can cream corn
1 big can of green enchilada sauce
1 can green chiles
1 can of diced chicken, or a small amount of rotisserie etc.
Half an onion sliced or diced, idc
Bring to a boil then add:
4 or 5 flour tortillas cut with scissors into tiny strips and boil 5 minutes.
Add lots of cheddar cheese
Sour cream if you like, but I didn't use any last time.
It's like a spicier chicken noodle, comfort food, not healthy.

I have had so many meh lentil soups and this one really stood out to me, though of course there's always personal taste involved!
Smoky Black Bean Beet Burgers from Minimalist Baker
I personally find about 1/3 cup of mix is the right amount for 1 burger
And a couple personal "recipes":
Baked Sweet Potato + Black Beans + Queso Fresco and/or Sour Cream + Pico de Gallo + Fried Egg (optional)
Polenta + Black Beans + Sauteed Kale w/Garlic + Tempeh/Tofu/Chicken w/BBQ Sauce (good with side of cherry tomatoes)
Roasted Root Veg (Carrots, Beets, Squash, etc) + White Beans + Italian Dressing (serve with bread or grain for added heft)

Chicken Thigh Enchilada Tacos with cheese was picked to get the full photo-shoot treatment for this week. It's nice and colorful and chicken thighs are tasty but less common among the standard recipe options each week. Enhancing the color for this recipe was a red bell pepper that had been carried over from a meal that didn't make it. The corn, yellow onion, and black beans with sliced green onion would've provided a pleasing mix of colors and flavors, but adding in the pepper really helped this meal come together both visually and in matters of flavor, texture, and volume. In fact, the amount of filling created from these ingredients was almost too much to keep in the tortilla. I don't know about you, gentle reader, but I like to do the half-burrito thing with my tacos where the back is folded in and the top rolled over to create an open ended but otherwise enclosed food delivery vessel. These were a bit too full for that plan to be executed successfully and a good deal of filling ended up as falling. I fared better on the second serving by changing the order of the layers to lock in the more energetic ingredients. The chipotle crema was pre-made and came in two little pods which made it easy to keep one fresh for the leftovers. Those little cross-polarized packets are handy for packing but quite difficult to handle when garnishing. I've learned that a much smaller corner cut than one would think is the way to go for getting an easy to control, piping bag style, spread of whatever the contents may be. I probably could've gone even smaller for this one! Pairing was the final Fat Tire Amber Ale from New Belgium. The seasoning on the chicken and enchilada sauce used to coat went nicely with the malty profile of the ale. It's hard to argue with tacos and beer.

Chicken Enchiladas

Of course! Here’s a quick and tasty recipe for enchiladas made using chicken:
Ingredients for Chicken Enchiladas:
For the Chicken Filling:
• 2 cups cooked shredded chicken (you can use rotisserie chicken)
• 1 cup black beans, drained and rinsed
• 1 cup corn kernels (fresh or frozen)
• 1 cup diced bell peppers (any color)
• 1 cup diced onions
• 2 cloves garlic, minced
• 1 teaspoon ground cumin
• 1 teaspoon chili powder
• Salt and pepper to taste
• 1 cup shredded cheese (Blend, Monterey Jack, or Cheddar)
For the Enchilada Sauce:
• 2 tablespoons vegetable oil
• 2 tablespoons all-purpose flour
• 2 tablespoons chili powder
• 1 teaspoon ground cumin
• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 1/4 teaspoon cayenne pepper (with extra heat/optional)
• 1 can (14 ounces) crushed tomatoes
• 2 cups chicken broth
• Salt to taste
For Assembling:
• 10-12 flour tortillas
• Additional shredded cheese for topping
• Chopped cilantro and sliced green onions for garnish (optional)
• Sour cream and guacamole for serving
Instructions for Chicken Enchiladas:
1. Turn the oven on to 375°F, or 190°C.
2. Add the onions and garlic to a big skillet and cook over medium heat until they are transparent.
3. To the skillet, add the shredded chicken, black beans, corn, diced bell peppers, chili powder, ground cumin, salt, and pepper. Simmer for a few minutes, or until the mixture is completely blended and the vegetables are soft. Take off the heat and place aside.
4. Heat two teaspoons of vegetable oil in a saucepan over medium heat. Add the flour, onion, garlic, ground cumin, chili powder, and cayenne (if using) and stir. Simmer for one to two minutes to form a roux.
5. Add the chicken broth and smashed tomatoes gradually while whisking. Stirring often will cause the sauce to thicken. Add salt to taste to season. Take off the heat.
6. Pour a tiny bit of the enchilada sauce into the baking dish’s bottom.
7. Fill each tortilla with a spoonful of the chicken mixture, roll them up, and put them seam-side down in the baking dish.
8. Make sure the rolled tortillas are fully covered with the leftover enchilada sauce.
9. On top, scatter the crumbled cheese.
10. Bake for 20-25 minutes, until the cheese is melted or bubbling in a preheated oven.
11. Take the enchiladas out of the oven and allow them to cool for a few minutes before serving.
12. If desired, garnish with sliced green onions and chopped cilantro. She was accompanied by guacamole and sour cream on the side.
