In every adventure i travel, its always a pleasure to taste any local delicacy your destination offers gastronomically. "Bahalina" My first taste of the so called locally fermented coconut wine. Locals call it "bahalina". It's the sap taken from a young coconut tree, distilled and aged in sealed containers away from sunlight. The longer the aging the better it tastes. My take on this drink: dry, semi sweet, with a slight hint of bitterness. As what the host told us, this was aged for 6 months. The best drink I've ever had. My first time ever to drink coconut sap. It was a treat. Thank God they haven't collected this one yet. This sap will then be blended with tungog for fermentation and it will become Tuba.
