Okra Corn Fry Up
If you’re new to okra and a little curious, think about this...fresh okra has the best flavor but If you can’t find it fresh at your local grocer’s, try it frozen - who knew it was available that way. It’s great in tomato based dishes such as jambalaya or gumbo. Try this fry up and see what you think. Pssst…it’s part of a healthy eating plan.
olive oil
1 onion, chopped
1 green pepper, seeded, sliced thin
1 t. garlic powder
1 - 12 oz. bag corn, frozen, defrosted in colander, hot water run over it
1 - 12 oz. bag okra, frozen, defrosted in colander, hot water run over it
2 c. cherry tomatoes, halved
dash salt/pepper/Smokey Spanish paprika to taste
In a large fry pan, saute onion and green pepper until just tender. Add garlic powder, corn, okra, tomatoes, and dash salt/pepper/paprika. Heat through and serve. Just as easy as that.
