Ocarina of Time Rewrite
The Deku Tree, and Jabu Jabu were cursed by Demise.
Jabu Jabu is presumed to be under the weather for no reason.
And I think the Deku Tree's line would instead be, "Now...listen carefully...An old and great power afflicted me with the curse. It will soon take the shape of a man from the desert. You must prevent this power from taking this...the Kokiri Emerald…" in place of the canon dialogue.
Similarly Dodongos started to greatly increase in the cavern because of Demise's Influence, similar to the surge of monster numbers we see in BOTW, making it unsafe for Gorons to get their food so they closed it off to keep the infestation at bay.
See how none of this is Ganondorf's fault?
Ganondorf's tribe was afflicted with famine, and disease so he traveled to Hyrule to make allies so his tribe could survive (DESPITE Hyrule and the Gerudos history. His tribe was cut off from other Gerudo so they couldn't go to them for help. He was very desperate). He slowly became influenced by Demise's Curse the longer he spent in Hyrule Castle- because I believe the curse's focal point is beneath the castle, where Demise was once sealed. Demise's Curse only truly took control when; The Sacred Realm was opened and the Triforce split, and Ganondorf was given the Triforce of Power (Demise's piece of the Triforce).
Also, whatever Ganondorf's Coup thing that caused Impa and Zelda to run out of Castletown? Yeah no. Zelda gets the vision that she needs to leave the castle for her safety and stay hidden. Impa trusts her, and they stop by Link to drop off the Ocarina of Time.
When Link opens the entrance to the sacred realm, Ganondorf is there because Demise's influence is becoming stronger and basically puppeteers him to the Temple of Time to regain the power it needs to take over Ganondorf's body.
Post 7 year nap, Demise- in the form of Ganondorf does the shit he did. Link, Zelda and the Seven Sages defeat Demise, and Zelda sends Link back once the curse was broken for the meantime, to prevent Demise's curse rising in the first place.
He's sent back after he is told by the Deku Tree to go to Hyrule Castle but before he meets Zelda. He gives Zelda the Kokiri Emerald to keep safe, while catching her up to what happens if the Door of Time is opened. Then, afterwards Link goes to Ganondorf, gives him a warning to leave Hyrule Castle but he’s arrested by the Hylian Guard for treason. Link tries to protest but he is a child- and his accounts of “Ganondorf” causing mayhem (As told by Zelda) contradict his supposed innocence.
He helps out the Gorons, Zora and Nabooru, again, not taking the spirit stones with him but instead telling them to protect them fiercely. Nabooru isn't kidnapped, thanks to Link dealing with Koume and Kotake early. He gives her the silver gauntlets and informs her of what has happened (mildly breaks down because he couldn’t stop them from arresting Ganondorf). Nabooru and her tribe leave further into the desert to evade the Hylian Soldiers and search for help among the other Gerudo for their tribe's afflictions.
Then Link starts to get ready to look for Navi, Zelda gives him the Ocarina of Time for him to keep safe in return. He gives Saria the fairy ocarina back and sets off with Epona- who he bought from Talon (His wallet just defies time itself ig).
Then Majora's Mask happens.
