hey, just saw your '5 things that make you happy' post. i was wondering what upside down pineapple cake was? never heard of it!!

sure, glad you asked! it's basically a yellow cake topped with pineapple and maraschino cherries. the "upside down" part comes from the topping (so the pineapple, cherries, sugar, and butter) being put in the pan first and then topped with the cake batter. then after you bake it, you need to flip the cake "upside down" so the topping is on top

i think my mom usually makes more topping than it calls for (bc it's the best part), and she also uses diced pineapple instead of pineapple rings like a lot of other recipes use (the diced pineapple is more forgiving and you can therefore put on more pineapple lol)
