Taiwanese fried chicken + roasted sweet mini peppers + soy scallion noodles

Leftover mashed potato croquettes! Fried up some shallots and chopped kielbasa to throw into the mix and breaded the croquettes with panko 😋 They turned out pretty good, if I do say so myself! 😊

Made a makeshift bibimbap last night for dinner! Featuring beef bulgogi, braised potatoes and carrots, sautéed kale with garlic, pickled veggies, and a fried furikake egg over steamed rice 😋
