And I am among those who have taken to brewing their own beer while in lockdown. The result is a home bar well stocked with a mix of India pale ale, stout and cider – plus a few adventurous tipples that include mead and nettle beer. All for less than 50p a pint. Of course, home brewing is not always plain sailing. While the quality can be superior to anything available from a pub or supermarket – a result of fresh aromas and fruity hop kicks – brewing disasters can happen. The result is drinks occasionally infused with hints of soil and mould. But ‘brewing your own’ is always fun. Homebrew: The basic ingredients required for making your own beer from scratch – rather than relying on a kit – are hops, grain, water and yeast You can start with a basic 40-pint kit that includes liquid malt extract with yeast from £12 that can be picked up in stores such as Wilko. You heat the malt extract in a pan and then mix in sugar and water. The brew is then poured into a £10 plastic fermentation bucket with an airlock. Once cooled to about 20ºC, you add the yeast and leave everything to ferment for about a fortnight. While left alone, the yeast busily gobbles up any sugar it can find – and turns it into alcohol and carbon dioxide. It is then time to bottle. You might have spare screw top bottles lying around or old beer bottles. It might be worth investing £10 in a beer bottle capper plus £5 on a pack of 100 crown caps. Add extra sugar just before bottling to ensure that when you drink the contents there is a reassuring fizz that will provide a foaming head to the beer. Leave for two more weeks for final fermentation. Rob Neale is owner of online brewery store Malt Miller. He says: ‘Those with memories of old-fashioned budget kits that would give off a faintly recognisable homebrew tang will be pleasantly surprised by how much better today’s kits are. Companies such as Mango Jacks sell £20 kits that provide a great introduction to this fantastic hobby.’ The basic ingredients required for making your own beer from scratch – rather than relying on a kit – are hops, grain, water and yeast. But it is the process of putting them all together, known as all-grain brewing, that is the hard part. You should leave it alone to ferment into beer for a couple of weeks before bottling the ale for storage. You can spend from £20 for all the ingredients but the biggest investment will be the all-grain brewing equipment, which will cost around £200. If you invest in something fancy, such as a £700 all-in-one Grainfather, you not only get all the required equipment but also can be connected to a phone app that guides you through the process. Health benefits of Rice Kheer
1. When Rice Kheer is made with natural ingredients, it is very healthy and comes across as a better alternative to other sweet treats. It has fewer calories and offers 4 grams of protein. Every 5-ounce serving provides a small amount of both vitamin A and vitamin C. Also, it’s a good source of calcium and low in cholesterol.
2. It has a cooling effect on the body, which is helpful in the summer when the pitta dosha (the subtle energy that controls metabolism and can cause us to overheat) dominates.
3. Rice is a great source of carbohydrates which helps in restoring your glycogen that gets depleted from the muscles after exercise. A great post workout meal.
Rice Kheer recipe with berries chia jam
Ingredients
* ½ cup soaked whole grain rice
* 3 cups coconut milk or a little bit more
* ½ cup Panela or coconut sugar
* 1 tablespoon ghee (coconut oil for vegan option)
* A pinch of cinnamon powder
* Raisins
* Pinch cardamom
How To Prepare
Add the milk to a pot and bring it to a boil. Add the rice, panela or coconut sugar, and cardamom to the milk. Cook it on low flame for about 50 minutes or more until the rise is tender add more milk if you need it. In another pan, heat the ghee and fry the raisins.Transfer the rice kheer to three bowls and top it with raisins and the berry chia jam.
Healthy berries chia Jam
Ingredients
* 2 cups frozen berries - any variety or a mixture
* 4 tbsp chia seeds
* 3-4 tbsp honey or any liquid sweetener of choice e.g. maple syrup, coconut syrup, rice malt syrup
* 1/4 cup water
* 2 tsp vanilla extract
Procedure
Place frozen berries in a pan with 1/4 cup water melt over a low heat on the stove top, stirring and breaking them up gently so they turn into a slightly chunky puree.
While the berries are softening add in the vanilla, chia seeds and 3 tbsp of honey/liquid sweetener and stir to combine. Taste test and add extra honey/liquid sweetener if desired.
Remove from heat and allow to cool in the saucepan for 10 minutes or so. Stir once or twice to make sure the chia seeds are evenly incorporated. Transfer to a clean, sterile jar and refrigerate until cooled and set; it will thicken even more as it cools. This should keep for two weeks or even a little longe

For centuries, beer has been made with four basic ingredients: malt, water, hops, and yeast. Put basically, the sugars are extracted from grains so that yeast can convert it to alcohol and carbon dioxide, creating the final product: beer. While craft brewing is certainly guided by scientific principles, there is creativity involved, as brewers need to vary the combinations of grains, hops, yeast, and extracts to create a multitude of styles.
This dedication to creativity is what sets craft beer apart from mass market produced beer. The major domestic beer companies use cheaper ingredients – for instance, rice or corn instead of hops – to reduce the price of the final product, creating a watery, bland product.

MALTING The first step that goes into making craft beer is harvesting the grains. Once the seeds are harvested, they are run through a malting process, which creates the starch enzymes necessary to create fermentable sugars when the yeast is added later.
THE MASH
Once the grains have been malted, the brewer steeps them in hot water, a process known as mashing. This activates the starch enzymes in the grain, causing them to break down and release sugar. The water is drained, which leaves a thick, syrupy substance known as wort.
THE BOIL The next step in the brewing process is commonly referred to as the boil. In this step, the wort is brought to a boil and hops are gradually added at specifically timed intervals. Hops are a small, pinecone-looking fruit that provide bitterness that balances out the sugar in the wort. There are over 150 varieties of hops, and each type creates a slightly different flavor and level of bitterness. IPAs, or India pale ales, are known for their hoppy, bitter flavor, and typically feature three or four different types of hops.
FERMENTATION AND BOTTLING
After the boil is complete, the liquid goes into a fermenting vessel and the yeast is added. During the next few weeks, the yeast breaks down the sugars to create alcohol and carbon dioxide. When the fermentation process is complete, the beer is then transferred into bottles or kegs, where it will be ready in two to three weeks.
