Matt Penhos and the Evolution of His Culinary Career

He had to take a moment to think about it. What is it he loves most about preparing food for others? Is it a perfectly smooth gravy? The just-right juiciness of a medium-rare steak filet? The aroma of a simmering garlic butter sauce? “Um,” Matt Penhos mumbled, “That’s a very good question. I’ve been doing this for a while and most of the time it’s been about making someone else’s food. Like restaurant recipes, ya know?” Penhos, a graduate of the Culinary Arts program at West Virginia Northern Community College, returned to his contemplation and another few minutes passed by. “I think,” he said, “I think it’s when someone tries my food for the very first time. The cafeteria at East Ohio Regional Hospital often promotes its specials on the facility's Facebook page. “It’s a really nice feeling when someone enjoys the food you cook,” Penhos continued. “That’s really a nice, nice feeling, ya know? To be able to give someone something they really enjoy.” But? “But, ya know what? The real reason I fell in love with food and cooking and this whole business is the ‘Wow Moment’,” he said with wide eyes. “Ya know, when someone tastes it and all of a sudden it’s like they have discovered something they’ve been looking for their whole lives. “That’s the best moment. The ‘Wow Moment.’” After a little more than five years as the kitchen manager at Quaker Steak and Lube at The Highlands, Penhos made a move to East Ohio Regional Hospital in April to become the facility’s director of food services. Now he supervises the meals made for the hospital’s patients, those residing in acute long-term care, for the customers at Starbuck’s on the first floor, and for the cafeteria’s customers. But that means, on any given day, Penhos may distribute as many as 450 meals, so how can “Wow” be possible? “I think most people think automatically that hospital cafeteria food is kind of crappy, but if you get the right people working with you and you elevate the quality of your ingredients, what you serve can be terrific. That’s what we’re doing here at East Ohio now,” Penhos said. “Chef Barry Metz has joined me here at the hospital after he and I worked together for a lot of years, and his knowledge has made a huge difference with what we serve on a daily basis. “We’ve been changing things up quite a bit,” he said. “So, now, it’s not your typical hospital cafeteria.” Penhos manages the kitchen that feeds more than 125 individuals each day. Word of Mouth People chase taste. And word about Penhos, Chef Metz, and the new-and-improved menus apparently has spread through the Martins Ferry community because, on occasion, a few newcomers have paid visits to the hospital’s bottom level. Penhos, in fact, may soon see even more now that EORH’s Facebook page posts the Café’s daily specials. “It’s really a cool experience when we have people from outside the hospital come to eat because they’ve heard about our food,” Penhos said. “We had a Veteran’s Day event here and there were a lot of comments about the food being good, and we’re hoping to do more functions like that. It’s a lot of fun when we have the chance to interact with people in our community. “That’s the thing with cooking food,” the food service director said. “If it doesn’t taste good, no one is going to eat it.” Penhos learned how to be a food service professional when the Culinary Department at West Virginia Community College was in its infancy in the early 1990s. The cooking classes were held in the basement of the Hazel Atlas Building in East Wheeling before the college purchased and renovated the current Education Center along 17th Street. “I was attending West Liberty, but that didn’t work out well for me so I decided to go to culinary school, and that really opened up a brand new world to me,” said Penhos, who also has worked with DiCarlo’s Pizza at the Dallas Pike location. “The culinary arts program was a life-changing experience. A full salad bar is available each day at the EORH's cafeteria, and the public is invited. “I had worked in restaurants before starting at Northern, so I had some experience in a kitchen, but I learned a ton about food and flavors, and about the business side of the business,” he explained. “That’s why this job is perfect for me because I didn’t go toward the chef side of the business, I went to the management side and here I am now.” Last topic: What’s the best part of his position – and situation – at the Martins Ferry medical center? “The best part,” Penhos started to say. “That’s a very good question.” Is it when the food order is perfectly delivered? When a member of his staff receives a positive review for food and service? Or is THE best part of those “Wow Moments” mentioned before? “Well, if I’m being perfectly honest,” he started again. “The best part has to be the schedule. It’s the quality of life. It’s amazing. It is really amazing because when you’re a manager in a restaurant, the only life you have is what’s left after work. Now, I have a life. “And I love the people I work for because they let me do my job and if I need them. They’re there for me,” he said. “That’s exactly what a person in my position needs, and it’s now my reality and I love it.” Read the full article

Matt is currently in Seoul, South Korea currently directing the South Korean Production of Beetlejuice: The Musical The Musical The Musical! Rehearsals started on April 18th, 2021!
We also got some information!
It is going to be Double Casted, meaning we have two people playing the same roles. Two BJ’s, Two Lydia’s, Two Delia’s etc.
Cast info will be leaked in a few weeks!
It will be translated in Korean. All the dialogue, key phrases and songs will (satirically) reflect South Korean views.
The OG production crew, lyricists, writers and composer are all working with translators to help!
The awesome @hoodoo12 speculated that actor Jung Sung-hwa will be one of the two portraying the Ghost with the Most! Jung Sung-hwa has been in the South Korean productions of the Man of La Mancha and Les Miserables. Alex Brightman is very excited to meet him if he is one of South Korea’s Betelgeuse’s!

A musical is generally a more complicated beast for stage crews, stage managers, and the calling stage manager (who cues the show) than a play—but The Play That Goes Wrong is a clear exception to that rule. “There’s so much of the show that is tightly choreographed to make it look as if it’s all going wrong,” says Matt DiCarlo, who served as production stage manager and associate director on the Broadway production and director of the Off-Broadway and national touring productions. “It often makes it feel like a musical.”The Play That Goes Wrong is a technical feat. The comedy only works if everything goes wrong exactly according to plan. To make things go wrong, a lot must go right.

So Matt DiCarlo is leaving Beetlejuice in a few weeks. I know I’m not ready to apply for the stage management team, I’m just really curious: do we have any idea how the team will change? It sounds like he’s bumping Rachel into PSM, so I’m guessing then one of the ASMs will get bumped to SM and they’ll need one more ASM? Maybe they’ve already had someone starting to learn it?

Halifax expects new snow-clearing contract will solve problems experienced last year
Halifax is expected to receive its first significant snowfall of the winter and the municipality is in preparation mode.
After facing criticism last winter, HRM has negotiated new contracts with companies responsible for clearing the sidewalks. 
"What would normally take 10 minutes for me to wheel would take 45," said accessibility advocate Brian George. "I got stuck numerous times and it was just unacceptable."
George is one of the many Haligonians who has horror stories about the struggles of navigating icy sidewalks last winter.
"It's not even just about accessibility issues, it's anyone with a stroller, a walker," George said. "Lots of people were having issues getting around last winter and I hope they improve things this year."
The city says that's the goal and the reason why they have awarded new, four-year contracts to four companies who will be responsible for clearing city sidewalks.
"All contractors are expected to meet the service standards as well as the parameters that are outlined in the tender," said HRM spokesperson Erin DiCarlo.
In total, council has budgeted $14.8 million on sidewalk clearing over the next four years.
Despite the safety and accessibility problems caused by inadequate clearing last winter, Halifax Regional Coun. Matt Whitman is concerned about the cost.
"I wasn't impressed with the negotiation, every one of the companies came back a lot higher than previous years, all millions of dollars higher, and we didn't even take the lowest bidder which really frustrated me," Whitman said.
George said he blames the city for what happened last year and hopes they've learned a lesson.
"I can't help but blame the city," George said. "When the winter was over, the city was bragging about how they saved all this money with snow clearing, but I felt like, quite frankly they just didn't do enough."
The city confirms Tracey's Landscaping was not offered a contract, after a staff report determined their clearing efforts last year weren't up to HRM standards, and that their bid was unrealistically low compared to the other bids received.
Tracy's landscaping could not be reached for comment.
The city also hopes a new piece of gear that was purchased last march will help to keep things clear.
"The municipality is always exploring new and innovative ways to improve service, and one of the pieces of equipment that was purchased last season was the ice breaking machine, that can be used on sidewalks throughout the region and it's really helpful in breaking up that thick stubborn ice we saw after many of last year's storms," DiCarlo said.
George and others hope that new technology will help create a clearer path to clear sidewalks.

“The Play That Goes Wrong” show #797

A disaster of a show that is just so damn funny is The Play That Goes Wrong. With the title of Broadway’s former longest-running play, it has made the Off-Broadway jump to New World Stages, helmed with fresh energy but the same knack for comedy by Matt DiCarlo. Having seen this gem of a slapstick, physically-demanding comedy in its Broadway run, I entered the new production with the same expectations for sore cheeks and abs (okay, beer gut) from laughing so hard. My expectations were met within the first ten minutes, then continued to exhaust me from laughter, as I rubbed many a tear from my eyes on my way out of the theater.

Though an ensemble piece at its core, the company at hand is led by Matt Harrington playing Chris, company director and lead detective in the murder mystery-within-the-play, The Murder at Haversham Manor. Chris, a professional-yet-eccentric, studious actor-director is magnificently portrayed by Mr. Harrington when breaking the fourth wall and when engaging in the antics of his fellow actors. Brent Bateman’s booming presence and vocal timbre is perfectly suited for Robert, the brother of the woman who is having the affair with the murder “victim.” Mr. Bateman has a huge load of the physical comedy bestowed upon him, including keeping a whole study of furniture afloat, and he handles the script’s comic physical stress extremely well. Matt Walker is a scene-stealing leading man whose character, Max, is a constantly-breaking ham of an actor. Every time he earns his applause he blatantly invites the audience to do more by taking the bit a step further. It is in Mr. Walker’s uncanny ability to never let the Max bits get tiresome which makes him such a standout performer.

Ashley Reyes is a wonderful ingénue, Sandra, and her emotionally exaggerated demeanor over the supposed death of her fiancé, while playing coy off Mr. Walker’s “advances,” is endowed with melodramatic finesse. Ms. Reyes, too, has a burden of physical and vocal comedy to deliver, and she does so with aplomb and integrity to her character’s truth. Ryan Vincent Anderson and Bianca Horn play the two stagehands, Trevor and Annie, respectively. Both are featured standouts in their own right, making their sprinkled turns of comedy and stress, over all the stuff going wrong into moments of honest hilarity.
Nigel Hook’s Tony-winning scenic design holds up in the more intimate space New World Stages offers, still being a mansion-esque space for plenty of antics and destruction to ensue while being furnished to the nines. Mr. DiCarlo’s attention to each character’s due time to add their color of comedy makes the show an absolute gem of production. The timing, individual nuances, and most of all, allowing the set to truly be a principal player among the madness are all part of what makes The Play That Goes Wrong so damn right!

Heath Ledger estaba en el tope de su juego, la crítica amaba su actuación en Batman: el caballero de la noche, encarnaba al Joker, y todos hablaban de como tenía asegurado el Oscar de ese año, que terminó ganando póstumamente, cuando desafortunadamente falleció, repentinamente, por una sobredosis accidentales de pastillas prescritas. 
La vida personal del intérprete no era un cuento de hadas. Sus últimas semanas fueron bastante tormentosas, debido a que estaba separándose de su novia, y madre de su única hija, Michelle Williams; a la vez lidiaba con una neumonía y grababa una película. El estrés fue demasiado, Ledger estaba exhausto de todas las formas posibles. “Él extrañaba a su chica, extrañaba a su familia, extrañaba a su pequeña niña, él quería verla desesperadamente y sostenerla y jugar con ella…Él estaba desesperadamente infeliz.” declaró Gerry Grennel, su amigo y entrenador de dialecto.
La tragedia enlutó al mundo del espectáculo, no solo porque se perdía a un increíblemente joven (murió a los 29 años) y talentoso actor, sino porque dejaba huérfana a Matilda, su hija de tan solo 2 años.  Nueve años después, la familia y amigos de Heath han decidido lanzar un documental, titulado “I am Heath Ledger”, donde veremos material exclusivo del  rubio intérprete, bajo los lentes de su propia cámara. 
El film contará con entrevistas a actores, directores y miembros del mundo del espectáculo, como Naomi Watts, Ben Mendelsohn, Emile Hirsch y el el director Ang Lee, que hablaran del impacto que Heath tuvo en sus vidas. Así como también, testimonios del círculo más cercano del protagonista de 10 Things I Hate About You.
“Aún me siento muy conectada a Heath. Me siento conectada a él a través de su hermosa hija Matilda…Cuando Heath estaba aquí, ella se parecía tanto a él, nosotros solíamos decir: ‘Es como Heath con moñitos’… Ahora todo lo que ella hace, la forma en la que anda en patineta, me recuerda a Heath. Durante los primeros cinco años, cada vez que la veía, estaba en lágrimas, pero ahora puedo estar feliz y sentir la energía de su papi a través de ella”. confesó Kate Legder, la hermana del fallecido actor.
Una de las cosas que más resaltan del tráiler, que ha estrenado la plataforma Spike Tv, es la pasión que Legder tenía por la dirección, casi todos sus conocidos los recuerdan con una cámara en la mano. “Siempre fue un director”, dice su amigo de la infancia Trevor DiCarlo. “Actuar fue solo una forma de llegar allí”.
También resaltan el hecho de que no tenía miedo a los riesgos o prejuicios al momento de escoger sus papeles, como el controvertido rol en la película Brockeback Mountain. “Antes de Brockeback Mountain, hubiese sido imposible imaginarse una tragedia romántica con dos vaqueros gays”, dice Mendelsohn. “Era uno de los galanes más grandes de la industria cuando asumió ese papel. Eso es ser un artista”.

In September 2017, I stepped up to the starting line of the Run Rabbit Run 100 in Steamboat Springs, Colorado, alongside my friend Jayson Sime. The race is a 102.9-mile ultramarathon with 20,000 feet of elevation gain, which is no small feat for a couple of guys who don’t know what they’re doing. Jayson had talked me into it, and if I were to be completely honest, I’d say we were there to test out his life philosophy, which is basically that you can do anything you dream up, as long as you put in the work and refuse to quit. That ethic has worked for him in almost every other area of life, despite growing up in poverty, one of six children with no father, and dyslexia. In the six months leading up to the race, we figured since we weren’t naturally talented runners, the best thing we could do is work hard. So we ran 50- to 70-mile weeks all summer, and went through a full range of feelings: fear, regret, sadness, FOMO, hunger, thirst, exhaustion, pain, and joy. And gluttony, which is not a feeling, but what happens after you run 20 or more miles. The chart below is a representation of a training plan for a 100-mile race (but if you’re really looking to train for a 100-mile race, you should find a real training plan online or in a book).
