Day 10 In the morning we explored Eaglehawk Neck and some of the interesting geological formations on the coast including the Tasman Arch, Blowholes and the Tessalated Pavement. Next stop was Nonesuch Distillery, to sample some delicious gin and hear from Rex the passionate owner. After his sales pitch, Bren couldn't leave without a bottle! We visited the historic town of Richmond and had a Tassie icon for lunch - the scallop pie. Delicious! The place was packed with tourists walking the town to see all the historic landmarks including the Richmond Bridge (oldest bridge in Australia) and St John's Church (oldest Catholic Church in Australia). Both were built in the 1830's. Our camping spot for the night and tomorrow is the Hobart Showgrounds. Pretty strange set up with caravans and tents dispersed amongst the empty pavillions and animal yards but it is popular as it's the closest and most convenient park for all the Hobart attractions. The view from our campsite is Mount Wellington in one direction and a Bunnings Warehouse the other hahaha

This whisky honours the vital role of the cooper, whose expertise we rely on to ensure that our casks are of the highest quality and are a perfect vessel for our whisky to mature in.
This time the cooper's work didn't end with the making of the cask - we brought him into our distillery to work alongside us distilling the spirit and filling the cask.
The result is a truly extraordinary whisky that is limited to just 40 bottles with an A.B.V. of 50.5%
I am really proud of being able to acknowledge the coopers in this way.

As Easter approaches we are excited to share this recipe that brings together two things we absolutely love, Australian Lamb and Nonesuch Tasmanian Sloe Gin
Sloe Gin is a wonderful addition to many meat dishes and in this recipe it adds a dimension of flavour and a twist on the traditional Easter lamb roast that is sure to impress. It is a unique and delicious way to serve lamb.
