Ingredients:
- 500 grams pork, cut into bite-sized pieces - 2 onions, finely chopped - 3 tomatoes, finely chopped - 2 green chilies, slit - 1 tablespoon ginger-garlic paste - 1 tablespoon red chili powder - 1/2 teaspoon turmeric powder - 1 teaspoon coriander powder - 1/2 teaspoon garam masala - 1/2 teaspoon mustard seeds - 1 sprig curry leaves - 2 tablespoons coconut oil - Salt to taste - Water as needed
Instructions:
1. In a large pan, heat coconut oil over medium heat. Add mustard seeds and let them splutter. 2. Add chopped onions and green chilies to the pan. Sauté until the onions turn golden brown. 3. Add ginger-garlic paste and sauté for another minute until the raw smell disappears. 4. Add the pork pieces to the pan and cook for a few minutes until they start to brown. 5. Now, add the red chili powder, turmeric powder, coriander powder, and salt. Mix well to coat the pork with the spices. 6. Add the chopped tomatoes and cook until they become soft and mushy. 7. Pour enough water to cover the pork pieces and bring it to a boil. Reduce the heat, cover the pan, and let it simmer for about 45 minutes to 1 hour or until the pork is tender. 8. Sprinkle garam masala and curry leaves over the curry. Give it a final stir. 9. Remove from heat and let the flavors blend together for a few minutes before serving. 10. Serve hot with rice or roti.
