And there we go!!! Our Sunday kos dishes. Our starch was roast baby potatoes. We always have our potatoes with skin on because it's very healthy. It contains potassium, iron, B vitamins and other nutrients. I also used frozen veggies from Harvestime to make the sweet and sour veggies. Added fresh red and yellow peppers to it. I bought frozen veggies just before lockdown and they are coming in very handy😊 Its lockdown and I had stocked on some Koo beetroot too for my iron. The baby spinach from the roast butternut and spinach salad added to the iron levels as well. Snoek for the omega 3...we marinated it with orange marmalade, orange juice and BBQ sauce. The orange was for our extra dose of vit C. And finally my fav...lamb knuckles...I slow cooked it in the oven. It contains Heme iron which is easily absorbable in the body. One thing we eat every week without fail. Everytime we plan meals, iron is top of the list because I really struggle with aneamia. I dont want to take any medication for it so I always win with diet. Now tell me this isn't a well balanced Sunday meal!!! We obviously had to have a glass (or 2) of bubbly.
