We are in peak preserving season here and this is one of my favourites. I made it first this time last year with a glut of boothby’s blonde cucumbers and this year it was a combo of 800g boothby’s blonde and a gherkin that got too big for its boots and grew to 200g. It’s layers of cucumbers and onions. I sliced the cucumbers and onions and left them overnight in cider vinegar, salt and sugar. They made enough juices to completely cover them in the jars.
