A lovely lunch of leftovers. Last night’s Cod and Clam Chowder (made Rhode Island-style with a clear broth and no milk or cream). What’s inside? Wild Icelandic Cod; Littleneck clams (steamed in white wine, garlic, shallots, and butter before being removed from their shells and added to the soup); diced fennel, potatoes, celery, onions, and shallots; fresh flatleaf parsley; lemon juice; dried fines herbs; broth from the steamed clams - strained; clam juice; chicken stock, Better than Bouillon Lobster base; teeny Farfalline (tiny bow tie pasta) which I cooked separately and added per bowl as served so they don’t get soggy and soak up all the broth. Garnished with fennel fronds and red pepper flakes.
