Here's a good use of leftover rice and home-made meat stock, make yourselves Transforming Furikake Gohan! The original gelatinous stock is usually chicken, but I had alot of pork stock from my Shoyu Ramen so I used those instead. 📖 ginger garlic scallions olive oil chicken wings sake soy sauce water eggs butter salt rice 🍚 Fry chicken wings in olive oil.In the same pan, add the sliced ginger and garlic.Deglaze the pan with sake once the chicken is seared. Add sugar and reduce the liquid by half.Add soy sauce and reduce again.Add water then simmer for 30 to 45 minutes.Strain the liquid then put in a container lined with plastic wrap. Put in the fridge for an hour then skim the fat off the top.Scramble some eggs.Cook in a pan on medium to low heat, then add butter.Scrape the bottom of the pan constantly and control the temperature by taking it on and off the heat.Add salt and some more butter. Put freshly cooked rice in a bowl and add the cut up the gelatinous chicken stock.Top with the runny scrambled eggs. Add more of the gelatinous chicken stock over the eggs. Been re-watching #midnightdiner 🗾 🇯🇵 today on lockdown day 6 and this Harusame Salad looked like a good idea for lunch. 📖 4.2 oz harusame (glass noodles) Any vegetables you have in your fridge (I used an open bag of herb slaw and some mushrooms) ½ tsp kosher/sea salt use half for table salt) (for veggies) 3 slices black forest ham (skip for vegetarian/vegan) 2 tsp toasted white sesame seeds Dressing: 3 Tbsp rice vinegar 2 ½ Tbsp soy sauce (use GF soy sauce for gluten free) 1 Tbsp sugar 1 Tbsp sesame oil (roasted) 🍥 Follow the packaging instructions to rehydrate harusame. My package instruction is to boil harusame for 4 minutes. Rinse under cold water to remove the starch. Drain well so the dressing won’t be diluted. Cut into smaller lengths if you like. Cut vegetables and ham into julienne strips. Now all the ingredients are ready. In a medium bowl, combine the dressing ingredients and whisk all together. In a large bowl, add harusame, vegetables, ham, and sesame seeds, and pour the dressing. Toss all together. Chill the salad in the fridge for at least 30 minutes before serving. Malaysian Stir-Fried Rice Noodles, Char Kway Teow, Kuey Teow Goreng,( 炒粿条) for lunch. Thought I made heaps but the hubs who's WFO threw most of it down his throat. 😆 📖 2 tbsp light soy sauce 1 tbsp dark soy sauce 1⁄2 tbsp oyster sauce 1⁄2 tbsp fish sauce 1 tsp sugar 1⁄2 tsp white pepper 2 tbsp oil 1 tbsp chilli paste 1 garlic clove(s) Prawns 180g rice noodles 1 egg Chinese chives Mix soy sauce, dark soy sauce, oyster sauce, fish sauce, sugar and pepper evenly. Heat wok over high heat. Add oil into wok. Add slices of minced garlic and chilli paste. Sauté until fragrant. (Note: This portion is for 2 persons.) Sauté prawns for about 30 seconds. Add noodles to wok and quickly stir-fry them while adding few spoonfuls of sauce at a time. Then, add an egg to the noodles. Finally, add chopped Chinese chives. Begedil (Malaysian fried potatoes). Make a big batch so you'll have extras because they're excellent for breakfast! 📖 : 5-6 medium potatoes, peeled washed and sliced into 1cm thick wedges 1 stalk spring onion, chopped finely half bunch cilantro, chopped finely 1⁄2 cup fried shallots 1 tsp white pepper 1/4 tsp cumin powder 1 egg beaten (to add with potato) Salt to taste Vegetable Oil for frying 2 eggs beaten (for eggwash) Most people deep fry the potatoes,drain the oil and then mash them in a dry bowl. Boiling ,however is a healthier alternative and I have done it a lot of times. Works either way. Throw in all the chopped ingredients including shallots and mix thoroughly. Season well and shape into medium sized balls with the palms of your hands before flattening.
