It's established in canon when Arthur Weasley is also bitten by Nagini that her venom prevents the bites from her wound healing, or rather, it prevents blood from clotting, so I don't know if Vulnera Sanentur would be effective. Someone at St. Mungo's did eventually find an antidote, though, and I can't imagine Snape wouldn't have gotten his hands on some and carried it with him, not trusting Voldemort? Either that or he would have come up with a spell to separate out the venom from blood.
Actually, according to facts I just made up now when Vulnera Sanentur is performed by a powerful enough wizard it also has anti-venom properties - so long as it is narratively convenient.
