Sunday lunch, or - since what with one thing and another we ate closer to dinnertime, it might be more of a Sunday dinch. :->

It was Moroccan-style braised lamb shanks, and it was really good; after 24 hours or marination and about three hours of slow cooking, the lamb was literally off-the-bone edge-of-the-fork tender.

Because the spicing was so complex (though NB like most North African dishes, not hot) we went for a simple accompaniment, plain couscous with a few strips of home-made preserved lemon to balance the deep, rich flavours.
I also included a dab of harissa with mine, and a couple of pickled chillis for zing.

Meat and recipe both came from Irish on-line source James Whelan.
I think this would work well in a slow-cooker.
BTW, on-line recipes like this can change with the seasons, so I'm adding it below the cut.

For a more fragrant and pungent dish, the lamb can be covered in clingfilm and marinated in the fridge for up to 24 hours to allow the spices to penetrate the meat. The accompanying couscous can be jazzed up with pistachio nuts and dried fruits.
Moroccan Style Braised Lamb Shanks – Printer Friendly Download
Ingredients
4 lamb shanks, well trimmed
1 tablesp. paprika
1 teasp. each ground coriander, cumin, cinnamon and turmeric
Sea salt and cracked black pepper
2 tablesp. olive oil
1 large onion, roughly chopped
2 garlic cloves, chopped
2½ cm piece peeled fresh root ginger, chopped
450ml chicken or lamb stock
2 x 400g cans chopped tomatoes
1 tablesp. clear honey
Squeeze of lemon juice
Serve with a bowl of couscous
Serves: 4
To Cook
Cooking Time: 2¾ hours
Preheat the oven to Gas Mark 3, 160ºC (325ºF).
Heat a large frying pan.
Mix together the paprika, coriander, cumin, cinnamon, turmeric and one teaspoon of pepper in a large bowl.
Add the lamb shanks and using your hands rub in the spices.
Add a little of the olive oil to the heated pan and quickly brown off two of the spiced lamb shanks.
Transfer to a casserole dish with a lid and repeat with the remaining lamb shanks.
Meanwhile, place the onion, garlic and ginger in a food processor or mini-blender and pulse until finely minced.
Add another tablespoon of the olive oil to the pan, then add the onion mixture and sauté for 3-4 minutes until well softened and coloured from the spices left in the bottom of the frying pan.
Pour a little of the stock into the pan, stirring to combine and then tip over the lamb shanks.
Add the remaining stock with the tomatoes and honey, stirring gently until evenly combined.
Cover with the lid and cook for 2-2½ hours until the lamb shanks are meltingly tender and the meat is ready to fall off the bone.
Add a squeeze of lemon juice and season to taste.

As you login to a work computer at Site-φ’s main base, you notice a new notification in your SCiPNET inbox. As the computer renders the splash image at a snail's pace, you squint at the title. The Phi-thon? It turns out to be a monthly newsletter... but what catches your eye is the announcement of a new member for THE BROKEN SCALES OF THEMIS.

The monthly menu for March, as curated by CHEF DE CUISINE Fulgence Carême, will be available for a limited time alongside the regular menu with meat, fish, vegetarian, as well as vegan options for our staff.
BREAKFAST (6AM - 10:30 AM)
Sausage Royale Croissant Roll with cheddar cheese, beef sausage patty, two strips bacon, fried egg. Garnished with dill and parsley. With spiced ketchup to taste.
Salmon Belly Royale Croissant Roll with wild salmon, crème fraîche, spinach and collard green hollandaise, topped with ikura-style salmon roe and salmon skin cracklings.
Mushroom Royale Croissant Roll (V) with grilled portobello, cremini, and king oyster mushrooms, crispy shallots, onion jam, and a herby rosemary sauce.
LUNCH (12 PM - 5 PM)
Cheese & Leek Croquettes with yukon gold potatoes, confit pearl onions, and black garlic chips.
Soft-shell Crab Tempura Burger with deep-fried whole soft-shell crab, pickled cabbage, sorrel, arugula, iceberg lettuce, ponzu vinaigrette or parmesan mayo. Comes with old bay fries.
Heirloom Tomato Preserve Flatbread (V) with arkansas traveler, aunt ruby's german green, hillbilly, and purple calabash varieties. Comes with olive oil and balsamic vinegar dip.
DINNER (5 PM - CLOSE)
Slow-roasted Pistachio Lamb with mint and pistachio crusted lamb leg, roasted cauliflower and new potatoes, horseradish cream, and truffle-infused gravy.
Pan-seared Yuzu Scallops with hazelnuts, clementine slices, and yuzu beurre blanc sauce. Comes with a light slaw salad.
Crispy Hen-of-the-Woods Mushroom Platter (V) with a medley of grilled wild mushrooms, artichokes, asparagus, and quinoa-wild rice pilaf. Garnished with walnuts and vegan pesto.
DESSERT Fresh seasonal berries with Chai-spiced Clotted Cream with strawberries, blueberries, currants, blackberries, and gooseberries. Chai spice contains clove, cinnamon, nutmeg, cardamom, and ginger.
Coffee Caramel Frozen Brazo de Mercedes with blended coffee ice cream, peanuts, cashews, and warm caramel sauce.
Vegan Raspberry Coconut Mousse Parfait (V) with silken tofu, agave syrup, raspberries, and layered with vegan dark chocolate cookie crumble, and topped with roasted coconut shavings.

Ostara Fairy Cakes with Pistachios & Rose Buttercream
These rose & pistachio mini Ostara fairy cakes give any Ostara tea party a fairytale vibe.
Serve these on your porch with some tea or take your cakes into the woodlands and make your Spring Equinox celebration magical with a picnic in a forest setting.
Tie on an apron, and let’s get started.
Ingredient Correspondences and Kitchen Witch Facts
The crucial ingredients in this recipe for Ostara fairy cakes symbolize key aspects of Ostara, the first spring holiday on the Wheel of the Year.
Pistachios
Ruled by Element of Earth, pistachios nourish life and ground us in the present moment.
Crack open a pistachio and peel back the paper-thin skin.  Underneath it, the bright green color of a shelled pistachio resembles the bright green of tender grass shoots and baby leaves emerging from the trees.
This shade of green symbolizes new beginnings and the early spring awakening of growth and renewal.
Lemon
We use the fresh, cleansing scent and flavor of lemons in witchcraft to clear negative energy and refresh the mind.
In this recipe, the sunny yellow color of lemons is a sun symbol and represents the growing of the light into the spring and summer months.
Rosewater
Although we generally think of roses as a component of love spells, in this case they symbolize dreams and good luck.
Spring is a season for imagining what is possible.
Add roses to your Ostara fairy cakes to weave the magic of hope and inspiration into your kitchen witch spells.
Making Rosewater
If you don’t have any rosewater on hand, it’s extremely easy to make.
I used the following method.
 Strip the petals from the stems of organic-grade roses. Rinse them under cool water to remove any dirt or debris.
 Place roses in a pot of spring water.
 Bring to a low simmer until rose petals lose most of their color.
Allow to cool completely.  Strain the petals and store the extract in a sterilized glass jar in the refrigerator.
Pairings
Serve these delightful little Ostara fairy cakes with any of the following:
Purple Fairy Cocktail With Butterfly Peaflowers
Spring Fruit Salad
Pear Berry Goddess Bowls
Sweet & Spicy Roasted Nut Mix
Or keep it simple, and set these out with a bowl of strawberries, some nuts and a bottle of champagne.  
Ingredients
For the cakes:
-1.5 cups flour
-3/4 cup pistachios, shelled
-1 teaspoon salt
-2 teaspoons baking powder
-1/2 tablespoon cinnamon
-2 eggs
-1 cup sugar
-1/2 cup (1 stick) butter
-3/4 cup milk
-1/4 cup rosewater
For the buttercream frosting:
-1/2 cup (1 stick) butter at room temp
-juice of 1/2 lemon
-1 tablespoon rosewater
-2 cups confectioners sugar
Step 1
Preheat oven to 350 degrees.  Line muffin tins with paper liners.
In a blender or food processor, pulse shelled pistachios until they form a coarse powder.
Combine powder pistachios with flour, baking powder, cinnamon and salt in a small bowl.
Step 2
In a separate bowl, mix eggs, sugar, butter, milk and 1/4 cup rosewater.
Stir together wet ingredients with dry until smooth.
Divide evenly among cupcake tins.
Bake for 14-18 minutes, or until a toothpick comes out clean.
Step 3
While cupcakes are baking, make the frosting.
Cream together butter and sugar.
Add rosewater and lemon juice.
Once cupcakes are completely cooled, frost cupcakes.  Optionally, garnish with lemon zest, crushed pistachios and/or (affiliate link —–>) dried, edible tea roses.
Serve and enjoy!  Happy Ostara!

Apple-Honey Baklava
Total: 2 hr 10 min (plus 3 hr soaking) Active: 1 hr 15 min Yield: 32 pieces of baklava
Ingredients
For the Honey Syrup:
1 1/4 cups sugar
2/3 cup orange blossom honey
6 wide strips orange zest, plus 1/4 cup orange juice (from 1 orange)
1 1/4 cups water
4 teaspoons fresh lemon juice
For the Baklava:
2 sticks unsalted butter
3 Granny Smith apples, peeled and finely chopped
2 tablespoons orange blossom honey
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
1 cup walnut pieces
1 cup unsalted pistachios
1/4 cup plus 2 tablespoons breadcrumbs
24 sheets frozen phyllo dough (from a 16-ounce box), thawed
Directions
    Make the honey syrup: Combine the sugar, honey, orange zest, orange juice and water in a medium saucepan. Bring to a rapid simmer over medium heat, stirring to dissolve the sugar. Reduce the heat and slowly simmer until thick enough to coat a spoon, about 15 minutes. Remove from the heat and stir in the lemon juice. Let cool slightly.     Make the baklava: Position a rack in the lower third of the oven and preheat the oven to 375˚ F. Melt 2 tablespoons butter in a large skillet over medium heat. Add the apples and cook, stirring, until softened, about 5 minutes. Add the honey, cinnamon, salt and cloves; cook until the skillet is dry and the apples are sticky, 3 minutes. Set aside to cool.
    Pulse the nuts in a food processor until finely chopped; transfer to a large bowl. Finely chop the reserved orange zest and add to the nuts. Add the apples and 1/4 cup breadcrumbs and stir to combine.
    Melt the remaining 1 3/4 sticks butter in a saucepan over low heat. Brush the bottom and sides of a 9-by-13-inch baking dish with some of the melted butter. Unroll the phyllo dough onto a flat surface and cover with a damp towel. Lay 1 sheet of dough in the baking dish and lightly brush with some of the butter. (If there is a little excess phyllo just fold it over and brush lightly with more butter. If the sheet hangs out of the dish, trim to fit.) Sprinkle with some of the remaining 2 tablespoons breadcrumbs. Repeat the layering 5 more times (phyllo, butter, breadcrumbs). Scatter one-quarter of the apple-nut mixture on top.
    Layer 4 more sheets of phyllo on top, brushing with butter in between each; top with another one-quarter of the apple-nut mixture. Repeat this layering 2 more times (4 sheets of buttered phyllo, then one-quarter of the apple-nut mixture). Layer the remaining 6 sheets of phyllo on top, lightly brushing with butter in between each.
    Cut the baklava in half crosswise and lengthwise in the pan with a paring knife to make 4 quarters, cutting all the way through. Halve each quarter crosswise to make 8 rectangles. Cut each rectangle into 4 triangles. (You will end up with a total of 32 pieces.)
    Bake the baklava until golden and crisp, about 45 minutes. Remove from the oven; immediately pour the honey syrup over the top. Let the syrup soak in completely while the baklava cools, at least 3 hours.

Crispy bread with herbs and and spices baked right in.
I don’t know who in charge of item description picked ‘bread’ over ‘cookie,’ but happy belated Illusen Day/Earth Day
Ingredients
1/2 c butter
3/4 c sugar
herbs! (mint, thyme, fennel leaf, savory, etc)
1/3 c chocolate melted
2 eggs
2 tsp vanilla extract
2 c flour (I used a mix of graham and all-purpose)
1 tsp salt
1 tsp cinnamon
1 1/2 tsp baking powder
3/4 c pistachios
Recipe
In your mixing bowl, rub sugar and herbs between your finger until broken down.
Cream butter and herb sugar.
Mix in extract and cooled chocolate. Add eggs one at a time until blended.
In a separate bowl, sift flour, sugar, cinnamon, salt, and baking powder.
Add dry in 2 additions. Mix in pistachios and chill in fridge for 1 hour.
On a cookie sheet, divide dough into 2 balls, shape into long ‘loafs’ taking up most of the length of your cookie sheet. Give space between both loafs.
Bake at 350*F for 30 minutes, then pull from oven.
Once cool, cut logs into 1/2 in strips, and flip on their sides. Bake for 12 to 15 minutes more.

Blake is looking at me and I can tell he's doing his best to turn on the charm.
If he was anyone else, it would totally be working.
His eyes are a mesmerizing hazel, green shot with gold and the toasted amber of Fall leaves and his James Dean jawline and chin make me wonder what the scratch of his stubble would feel like against my... I give myself a hard mental kick.
'He's the enemy, Aaron,' I tell myself. 'He's the reason you keep your heart in a steel box.'
I notice that his upper lip catches on a slightly crooked tooth when he smiles and I hate how cute it makes him look.
When he says he doesn't remember me, I'm not sure whether to be relieved or furious.
Then again, maybe the thing that almost destroyed my life was just another laugh to him.
A moment of amusement, not even worth a thought after the fact.
While my brain tries to decide whether I want to laugh or die, I answer his question.
Leaning over the counter, I look down at the day's creations.
"What do I recommend? Well, what kind of flavors do you like?" I ask.
He shrugs and I notice his eyes are still on me and not the candy.
"I like sweet but I like bitter, too. Sometimes I just want the smoothness of milk chocolate. Other times I want something a little more... adventurous."
"Here... try this."
He takes it and eyes still locked on mine... pops it into this mouth.
You know how they say you'll know porn when you see it?
Well, I swear if someone made a film of this guy eating chocolate, people would think it was porn.
His eyes roll back in his head and he lets out a moan that makes me really glad that Mrs. Garcia and her little girls are gone already.
I can see him rolling the truffle around on his tongue, sucking on it until he finally bites down and gets to the spicy center.
His eyes slide open and they have this weird, unfocused look.
He's literally breathing hard and when he swallows I can't deny that my pants are feeling a little tighter than they were before.
"Oh... my... God... That was amazing," he gasps.
"What was that?"
"Um... a South American inspired... hot truffle," I say and hate myself for the blush I feel spreading over my cheeks.
I can't help it.
Suddenly 'hot truffle' sounds like some sort of dirty sex act and I think I'm going to have to re-think the name.
"Wow. That's, like, my new favorite thing. I don't think I can handle another right now though."
He looks a little dazed, to be honest.
"What do I owe you?" he asks, pulling money from his wallet like a drunk guy at a strip club.
"For the truffle? Nothing. It was a sample."
"Seriously? Well... at least let me buy another toffee then," he says, searching the case.
"Oh no... are you all out?"
"Of what?"
"The... the toffees with the pistachios," he says, looking like a kid who lost his puppy.
"Huh?"Oh no. I only make those on Mondays. Do you like nuts?" I ask and then give myself another mental kick.
He nods.
"I love nuts."
God, kill me now.
"Okay, try this."
I hand him a chocolate-caramel-pecan cluster.
"Oh, better put it in a bag," he says.
"I only eat one a day."
I raise a skeptical brow at him.
"Really?"
"Yep. One treat a day."
"Okay," I say and put the nut-cluster in a little wax paper bag.
"Dollar-fifty," I say and he gives me a five.
"Keep the change," he says.
Then he grabs the bag and practically runs from the store.
'What. The. Actual. Fuck.'

When he's gone, I turn the sign, pull down the blinds and close the store.
There's a half-hour left until closing time but the end of the day is always slow and I just can't handle anything more right now.
I grab a rag and start cleaning the finger-prints off the display case but after a few swipes, I stop.
I let the rag fall from my hand and sink to the floor.
There's a pain in my heart I haven't felt in years.
It's something I thought I'd buried so deep I'd felt sure I'd never feel it again.
When I was sixteen, Blake Welling broke my heart and almost destroyed me and apparently he doesn't even remember who I am.
