Recipe for the Sugar-Free Banana Bread I just posted. :)
Sugar-Free Banana Bread
Ingredients
6 very ripe bananas (mashed)
2/3 cup melted coconut oil
2 eggs
2 teaspoons vanilla extract
3 cups oat flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup of Nuts ( I used Pecans )
1/2 cup of chopped dates
Crumble
4 teaspoon of Coconut Oil
2 tablespoon Oats
2 tablespoons Sesame Seeds
1tsp ground cinnamon
2 teaspoons of Stevia
Makes 2 Loaves.
Directions: Mix all ingredients together and put into 2 loaf tins. Add crumble on top.
Bake in a 375 fahrenheit oven or 180 celcius oven for 45mins - 60mins, depending on how you like your banana bread, and how deep your tins are. Wait till cool to slice otherwise it will be crumbly.
*Notes: Could add stevia to the whole bread mixture, but I don't like Stevia as it is too sickly sweet for me in large amounts. You could replace the coconut oil with butter or olive oil if you wanted to. I have been experimenting by making fat-free and sugar-free but it is too dry when it is fat-free. Also you could substitute the Oat Flour with normal flour if you wish.
