High tea at Sip Tea Room in San Francisco is fantastic

HOW. COOL. IS. THIS?!?! SmarTea cups from @bloomiteas What?!?! So…in the pretty little box you get 10 cups and 10 lids. Are you ready for this? The tea is in the cup! Yep! It’s tucked neatly beneath a plant based fiber filter that is sealed in the cup (without adhesive, of course). Organic tea and botanicals steeped right in the cup. Convenient! I know you’re wondering (I was too) about oversteeping. It didn’t seem to be a problem at all. You add about 1/4 cup of hot water and swirl it around. You can see the tea leaves expand and they get pretty well compacted under the filter. Top it off and you’re ready to go. This selection is was a nice flavor combo. A little grassy and vegetal green tea with just a hint of rose. It was very fresh and I enjoyed the convenience, too. I’m pretty impressed with this innovation! Episode 5 - Tea Nerd Feng Lanxi (part 1)

I love this detail about Feng Lanxi. He’s a tea nerd! So in ep 1, when we first meet him, he talks about how the increased precipitation has impacted how the water tastes. And we see it again here. He is using specific waters for his teas. In gif # 3, from right to left, the containers are labeled: rainwater of Jiangnan (Jiangnan Yu Shui), melted snow from plum blossoms (Mei Hua Xue Shui), and water from jade spring (Yu Quan Shui).

Note: Salt can be used to decrease the the sharpness, bitterness, and astringency of tea. It impacts, I believe, how your taste buds perceive the taste. Along the same lines, DO NOT use distilled water to brew tea. It makes the tea taste much less pleasant.

Family owned tea factory Nishide Tea Factory’s Premium Shincha....actually it’s no longer shincha since it’s been half a year since the harvest (shincha literally means “new tea” so is the period generally 1-2 months after the harvest). It’s now better described as a high grade spring sencha or perhaps an aged shincha (which is a misnomer to be truthful, but sounds yummy!) This is the last 4 x 100g of the beautiful package which I can’t bring myself to repackage into an ordinary package.
