Jones and Max both discovered their ability to heal by healing an animal.
Jones knew that his ability was dangerous, and he tried to keep it hidden, but as a child, he was extremely compassionate and hated to see anything in pain. He had the means to change it, so he did, when he thought no one was looking. After he was caught and forced to use his healing on prisoners, he blamed that compassion for his situation, and if he wanted to survive, he reasoned, he needed to get rid of it.
Max found an injured bird in their backyard, and in a panic, he healed it. Lucky for him, Isobel was the only one around to see it. He knew that he couldn't risk them getting caught, and so he did the best he could to hide all of his abilities, healing included, away. Instead of learning to control them, he did the best he could to suppress them, so he didn't put Isobel and Michael in danger, not even by accident. That didn't stop the guilt, every time he had to deal with an injured person at work. He avoids the hospital not just because of his fear of doctors, but because of the guilt over what he feels is his inaction.
