pour over + espresso with a mahlkonig vario... second (hand) grinder? while i've been a pour over kinda person for a while (aeropress / hario woodneck), i've always wanted to be able to make decent espresso at home too (mostly for short milky drinks rather than neat, though). i've purchased a flair classic (+ pressure gauge) a week ago and loving it but... the vario is not particularly great at switching between espresso and filter grind.given how good hand grinders have gotten over the past few years (and how many people use them for espresso!) i've started looking into these given that the vario is still working very well and was not particularly cheap to begin with :) found the 1zpresso jx-pro which is within my budget and almost bit the bullet but then i had a look at the 1zpresso q2 and now having second thoughts. i know they are entirely different grinders but hear me out...other than the vario i also have my trusty porlex mini which i use when travelling and which, from what i've seen, is so vastly outperformed by modern hand grinders it's not even funny. the q2 seems to be the dream upgrade in that regard and i'm not planning on travelling with the flair :)so now i've got the following choice:get the q2, use it for pour overs and travel, vario for espressoget the jx-pro, use it for espresso, vario for pour over... but at it's size and weight likely stick to the porlex for travel?the flair is currently making 100% of my coffee as it's new and exciting but once i get back to making pour overs too i'll likely be making slightly more of these than of espresso.what would you do? getting two new hand grinders is - for me - a step too far :) the choice seems to be between using a hand grinder for my first morning aeropress and nicer coffee when traveling or hand grinding my afternoon espresso and trusty'n'dusty porlex mini for travel. the jx pro does look quite big and sounds heavy at almost 4x the weight of the porlex and 2x of the q2...are there some options i haven't considered? some downsides or benefits of either i haven't mentioned? fwiw the vario is on ceramic burrs (though i've seen a lot of people recommend getting the steel burrs for espresso).thanks! HOW TO MAKE ROASTED BEETS WITH BALSAMIC GLAZE

Wash and trim 900 grams of beets. Cut them in half to speed up cooking. Rub olive oil and sprinkle sea salt on them. Bake at 400 degrees for an hour. To make the glaze, simmer half a cup of balsamic vinegar and add two teaspoons of evaporated cane juice to it. Remove from the heat and add one teaspoon of grated orange zest. Toss beets with glaze.

Gerald Cannon, “Combinations”

Introducing Gerald Cannon should not be necessary but the industry being what it is, it tends to keep a relentless focus on marketable stars rather than true musicians. Suffice it to say that Gerald Cannon has played (I mean played, not surreptitiously sat in) with McCoy Tyner, Art Blakey, Roy Hargrove, Elvin Jones and dozens of major players—he himself being one.

For those who know, there’s hardly any point in delineating the music since the line-up says it all. Kenny Barron is recognizable after a few notes of introduction to the poignant bossa “A Tought”; Willie Jones III lays a thick and elegant groove throughout the session; the alto players are all superlative personalities… and everybody takes care of business the way they cannot help but.

What is worth noting is the aesthetic content. Apart from his strong playing and excellent compositions, the leader shows that he is actually adept at organizing a consistent whole, building on his experience of hard-hitting straight-ahead, Latin beats, gospel, bebop, blues, r ‘n b… “Gary's Tune” is certainly an oddity in that respect. Otherwise, this superb recording perfectly balances sinewy swing with sensitive musicality.
