This is a picture of my new granddaughter from last Easter, shortly after her first birthday. As you can see she is beautiful and 100% healthy thank God, but it wasn’t as easy as it appears. My daughter in law is a Type 1 Diabetic and she spent her entire pregnancy going through tests, seeing doctors, watching her diet and her levels so her little girl would be born healthy. She will be dealing with this forever. They spend a fortune on insulin for her. Can anyone out there give me a single solitary reason why the Republicans today killed a bill in the Senate that would have capped the monthly cost of insulin? Because I am open to suggestions. She’s young, it’s their first baby, but there are children for God’s sake with this awful disease and parents paying a fortune for their insulin. Today’s amazing vegan brunch was tempeh sautéed with sweet apples in a banana, butter and raspberry sauce ‘til golden brown. First off, thank you all for your kindness and prayers, I appreciate them more than you will ever know. The update is a brain bruise among other things that has sidelined me for now. Five hours of live TV requires a lot of energy that right now I just don’t have. Therefore I will not be able to do Friday’s show. Hopefully I will be back soon and things will return to normal. UPDATE!! I am back home and mostly bed ridden right now as I have to be careful with my head injury — a brain bruise that thankfully did not develop into a brain bleed which often happens with patients who take blood thinners. Still this or other complications could emerge so I have to watch for the warning signs they gave me at the ER. My ankle is bruised and my toes have ligament damage. My back and shoulder are messed up and my fever is still here after on and off for two days as is my headache. The oxycodone is now gone from my system leaving me with just the Tylenol for defense. Other than that I am just fine. Thank You all for your kindness and prayers. It could take a month or more before I am really better. How much have I learned from all of this? I’m sending this to all my fellow vegans (and vegetarians too). Ever in a hurry for a quick meal? This is one of my absolute favorites. Pick up on Mac and Chao (delicious vegan cheese I buy in slices too) and then add some frozen peas (cooked separately), as many as you want. I tend to get a bit carried away because I love peas. I generally add a piece of bread and plant-based butter and I am good for the night. Last week Publix was running a “buy one get one” on the Mac and Chao!
