my quest to make the best "upgraded" boxed mac n cheese

so, tonight, at 10:30pm, i decided i was hungry. so i made some Kraft Classic boxed mac n cheese. however, i did not follow the instructions on the box to a t. no no no, i did some experimenting.

you see, i find that every time i make this delicacy, the noodles are always too mushy, the flavor too boring, and also i never get quite enough because i have to usually share with my sister and dad, and they take bigger servings than me because i'm nice. HOWEVER! that is to change.

i decided to cook the noodles for 6 minutes and 30 seconds instead of the box's recommended 7-8 minutes, as i thought that would be enough to cook the noodles to a nice al dente. but oh, was i wrong. i decided to test the noodles at the 5 minute 30 second mark, and they were PERFECT! so, they were drained early.

i also decided not to shake the strainer, and attempt to leave some of the pasta water in the pot, to help emulsify the butter and create a pseudo-butter sauce. it made the overall sauce more liquidy, so i will shake the noodles next time, but not a lot. just a little shimmy.

next, i went to put milk in it, but alas! we are out of 2% milk! whatever to do! so, i checked one of the THREE???? open chicken broth containers in the fridge (this is all on my sister), and it smelled fine, and i used about 1/8 cup of chicken broth, and another 1/8 of half and half, as my dad uses it in his coffee.

i then added it all together, and although it did come out liquidy as previously stated, this is by far one of the best boxes on mac n cheese i have ever had. i also added some freshly ground pepper on top, to add a little more flavor.

however, i know i can still improve on my techniques. i know that there will be better boxed mac n cheeses made by my hand. therefore, i am now on a quest to make the best boxed mac n cheese i can, always using Kraft Classic in order to make sure that everyone could also follow along if you wish to do so. i know i would enjoy little upgrades to something that is so basic, it is a true neutral food.

am i gonna start using this as an actual blog now? maybe. i kinda just wanna rant about powerpoints for a second. because why the fuck are professors so fucking bad at making powerpoints????

ok, so i'm a social work/psych major, as you may have guessed from my bio and maybe my last post. you'd expect people in academia to be good at making academic powerpoints, right? WRONG

my social work professor, let's call them Dr. S, they love making powerpoints by just copy-pasting shit from the textbook or whatever other source, and then not re-formatting it to fit into the powerpoint. or, they'll write some of the slides themself, which seems fine, until you realize their background is in corrections so everything they right is straight to the point, which sometimes makes zero fucking sense. or, they'll make insanely confusing grammatical errors, and not fix them, which makes me have to decipher what the fuck they're trying to say.

and you may be asking, "julie, why don't you just take notes on their lecture?" because i have to hand write all of my notes. not because i can't type, but because i don't retain any information unless i hand write it down. sometimes, in high school, i would take invisible notes with my finger on my desk, just to retain some of the information if it wasn't enough to take actual notes on.

maybe one day i'll post some random pages of my old notes, since i kept all of my notebooks from high school, as well as keeping all of my notebooks from the classes i've taken so far, since i might want to look back at them in the future (which would honestly be kind of difficult since i write exclusively in sloppy cursive because my print is actually that bad). i'm kind of proud of the way i take notes, since developing my technique in high school and tweaking it along the way. it's not the fastest way to take notes, oh no, but it helps me retain the information, y'know?

anyways, my break timer just went off, meaning i have to get back to taking notes. that's my life. taking notes. always has been, always will be.

starting to use tumblr again because i realized: what potential future patient of mine would look up their social workers tumblr??? so i'm gonna start posting about how taking two classes at a time is basically the max amount of classes i can handle, but if i were to take three at a time i would just want to kill myself constantly. anyways.

i'm taking family systems and group dynamics this semester, and it's pretty chill so far. i didn't do the discussion post for my groups class yet (i fucking DESPISE discussion posts. professors, please stop them) and my professor not only has emailed me about it TWICE, but she CONTACTED THE STUDENT SUPPORT CENTER. how am i meant to tell this woman that i didn't do it on time because the question confused the fuck out of me lmao.

if you've read this entire post, good on you. maybe follow me. i really don't care. obviously, i would absolutely love it if i became tumblr famous, but i need an outlet to rant about my degree because i have two friends: one lives in france, the other doesn't really care about social work lol. and my family does not want to hear me talk about this shit lmao, they get enough of me as is. how do i sign off posts again?
