Okay I have a kind of long Demon headcannon so bear with me here:
Demons have a purpose in society. Actually, most races do. Fairies tend to keep the balance of nature, along with Giants. The goddess clan exist to serve a sort of "leadership" purpose, giving a sense of order and direction amongst overworld races. Demons, well... They keep the balance of magic throughout the realms.
How? Well, by eating souls. Hear me out- we know that souls have the ability to reincarnate in the seven deadly sins universe, but I'm headcannoning that the souls of people who have lived a good life get to reincarnate, and those who haven't, the souls of bad people, are just kind of there. Not able to reincarnate.
The souls that remain in this world tend to slowly sap away at magical energy from the surrounding area, their only 'life' force. Demons have a high concentration of dark magic sustaining their biology, so souls provide great nutrients for them. During the time demons were sealed away, the humans magical powers grew significantly weaker (I think this is cannon but I could be wrong?)
Now, why the humans specifically? Well, because they have the shortest lifespans. More humans died during those 3000 years than any other race, causing an backlog of souls in the atmosphere in their realm which sapped away at magical energy, leaving the human realm almost desolate. Because demons weren't around to prevent that.
I think this could also give a more ethical reason as to why demons eat souls and why they're able to do that in the first place, and I found the concept quite interesting, but what do you guys think?

so my friend told me about this COMPLETLY random headcanon and we kinda made a whole ass idea out of it.
So in one Episode of the 7ds ( at least in our translation) melascula was being called “ mela” by meliodas while the two of them were alone in that cocoon thingy, also appearing really close overall or let’s just say acquainted.
We got told multiple times that Meliodas was being the cruel and ruthless leader of the 10 Commandments . The fandom kinda made up the idea of him having a lot of concubines/being a man whore during that time so what if Melascula and him having kinda had a thing during his time back then? This will also explain of her raging hatred for Elizabeth even though we can also say that it’s just because she’s a goddess but still that headcanon is just so interesting HELPP.
LMAO not Mel being a man whore😭 in all likliness I think the Demon King would forbid that kind of behavior because it's a "distraction" but I like that head cannon so I'm gonna ignore that-
Melascula being an angry ex actually seems in character for her icl, imagine she was so angry (and hurt) because Meliodas never really loved her in the way she wanted- no matter what she did, it just didn't seem like he was capable of being a warm hearted, loving person. And then Elizabeth comes along, and he changes right before her very eyes.
It wasn't that he couldn't love, it was that she wasn't enough.
