There is this Polish cabbage dish that is traditionally full of meat, but here is the vegan version! I used cabbage and sauerkraut, onion, garlic, lots of mushrooms, both frozen and dried, herbs and finished with vegan butter... and let me tell you - you wouldn't even know this is vegan. Reconstituted dried chanterelles still have an awesome meaty texture!
