This tastes sort of like Swiss, however with a more lingering taste. This charges the flavor is a possible way for me, the way Swiss’ taste lingers reminds me of rubber, however this actually feels like cheese. The texture is similar to a hybrid of Cheddar & Swiss leaning more towards cheddar. This is decent, 7.1/10
Grilled Cheese: this was a good grilled cheese, text was great, taste wasn’t awful my only complaint was the flavor. I just wish there was more. Fortunately I ate this with a side of pickle chips which bought a good punch of flavor, however that’s not a grilled cheese. The cheese has very good melt, and I achieved a very nice cheese pull 7.4/10
Scrambled eggs: this cheese complements the eggs perfectly. The flavor of the cheese takes a back seat and supports the eggs, something I’ve desperately needed since these last two cheeses. The cheese however doesn’t blend with the eggs, and instead is a gooey blob. Good with eggs but the impact on them isn’t great 7.2/10

Starting off this is awful, I gag every time I try it. You get lured into a false sense of security because the cheese smells nice, but then you try and everything crumbles. Taste is awful, flavor, is awful, texture is awful, I don’t even want to make a grilled cheese out of this, if I hate the grilled cheese I’m not making eggs. The cheese is tangy in the wrong way, like if it’s expired but it’s not. It tastes like a soldering iron, and the apricots only impact is that tangy sting. The texture is even worse, the cheese itself is crumbly and melts in your mouth, but when you have a fistful of apricot thrown at you. Don’t buy this 2.3/10
Grilled Cheese: this wasn’t bad, if you make the grilled cheese with a very moderate amount it tastes alright, the bread and heat takes away the awful tanginess and makes it sweet. While not a good sandwich I didn’t hate it. 3.5/10

Swiss Madrigal Cheese $7.99 lb

I’ve been really been a fan of Swiss cheese, however after eating some of these previous cheeses my appreciation for it has gone up. I’m quite fond of the rubbery aspect of this, almost feels like I’m chewing on a dog toy. The flavor makes itself known but I could likely eat the entire wedge without getting irritated. And the taste it’s most impactful quality isn’t my favorite isn’t awful. 6.9/10
Grilled cheese: this is good, nothing really special about it. The cheese is a little rubbery but the flavor is that of a standard grilled cheese. 6/10
Scrambled eggs: ah this isn’t very good, the flavor of the cheese isn’t very good with the eggs, fortunately there’s no rubberiness. 3.8/10

Baked Lemon Ricotta Cheese $13.99 lb

This is a very interesting cheese, according to the very nice Trader Joe’s employee checking me out this cheese is only seasonal and generally only found in the summer, guess I’m a lucky duck.
Holy moly, this isn’t cheese. This is a lemon custard disguised as a dairy product. While the lemon is the most prominent taste you can’t get any bitterness, likely because its lemon paste or “lemon peel, glucose-fructose syrup [wheat] lemon extract, citric acid” after learning this fact I’m more disappointed. This cheese is sugar & glucose-fructose baked with lemon peel. Regardless the cheese by itself is fine in the beginning however the baked and sweet flavor later becomes overwhelming and discourages me from eating more. 6.4/10
In the process of making this grilled cheese I am scared.
Grilled cheese: do not eat this, ricotta does not melt, baked lemon does not belong in grilled cheese. This was awful, I hated this, never again, 4 bites is all I took, first bite I knew it was awful but needed to find the words to describe it. All I can say is don’t. Mama has officially a quitter, I am not eating this. Well again edible, no 0.6/10
Scrambled eggs: you can actually taste the ricotta in this, unfortunately it’s the only thing you can taste. I’m getting no egg, barely any lemon, and I guess the baked flavor is in there. But it’s pure ricotta. Instead of the usual scrambled egg it kinda resembles Gordon Ramsey low and slow scrambled eggs, however these eggs were not prepared slow or on low heat and so I am scared. If you want to get an overwhelming taste of ricotta this is for you, but not me 2/10

Basque Cheese $14.99 lb

This was very pleasant, the smell of the cheese very inviting, the taste is amazing, and the flavor is impactful but not disgustingly so. I picked this one out because of its price only being $5.10 (one of the lower outward cost of the cheeses I’ve reviewed) but I’m very surprised by how much I like it. There is one thing I dislike though; the exterior. While not prevalent in the picture the exterior is literal wax. I never google search my cheeses before hand, so I have no clue to its purpose. However after removing the wax this becomes one of the best cheeses I’ve tried so far. 9.2/10
Grilled cheese: I like this, I like this a lot. More than the expensive Brie, however I believe this is because of the added Mayonnaise. The flavors blend beautifully, the cheese doesn’t melt very well and cools very quickly. However I am bias, 9.4/10
Scrambled eggs: I don’t know if it’s the cheese or the fact I finally added salt to my eggs but they taste delicious. I can’t stress how much I like the taste of this cheese, the strong but not overwhelming flavor mixes well with the taste of eggs. My only complaint is because of the semi soft consistency of the cheese it does not shred well, so instead of having a nice evenness you get big clumps of cheese. Very good, I’m getting this again 8.8/10

Manchego Cheese $11.99 lb

This is not a cheese I want to eat by itself. The flavor is lacking, and the texture is crumbly like other hard cheeses. The only good part that I like is the exterior, it has a very impactful punch of flavor that stings the tongue. It tastes like a wet blanket. Not looking forward to this week 3.4/10
Grilled cheese: while this cheese is better in a grilled cheese, it’s only marginal. The only thing carrying this grilled cheese is the occasional kick of flavor from the exterior. I couldn’t actually taste any of the cheese, very disappointed with this one. 3.8/10
Scrambled eggs: I’m extremely disappointed with this one, it’s just scrambled eggs. The only good part of the cheese I liked is gone, the only evidence I get from this is the texture of melted cheese. You could service this to me and I’d never know there was cheese in it 2/10

Deli Style Cheesecake - $8.99 I think
The cheesecake itself is good, you have to refrigerate it for 4-6 hours and then leave it out at room temperature for 1-2 hours in order to eat it. The cheese portion has a good texture and flavor was a 7/10. I don’t usually like gram-cracker crust but I like this one, I think it’s cause they put sugar crystals in it.

Side note post 😄

The pizza was fantastic. Crust was a little thick, but that’s just how we like it. At first I doubted how filling it’d be I was surprised in the end when I was satisfied. Taste was amazing, fresh mozzarella is so much better than the regular shredded cheese. I have enough dough for 2 more smaller ones and I eagerly await them. 9/10

Mozzarella Cheese $3.99 each
Comparing this to the usual shredded mozzarella cheese there isn’t much flavor but it’s more impactful if that makes sense. You can’t taste it as much but it’s more prevalent. Not a cheese that you eat by itself, I don’t imagine myself taking bites of it throughout the day. Texture is alright kind of like chewing on more malubale rubber. Alone not very good 3.6/10
Grilled Cheese: I’ve broken a rule of mine, instead of making a grilled cheese with nothing but the cheese, and mayonnaise(grilled cheese with mayonnaise is peak) I’ve added additional items. I’ve made a pizza grilled cheese by; burning the sauce into the bread, crisping pepperoni, and slicing the mozzarella. By gosh this was great, half the sandwich was gone before I started the review. However, the cheese did not melt. I assume because it was thick cut, but even if I shredded it I don’t think it’d melt as much as I want, the cheese itself was like before flavorless but prevalent. I’d search for a better mozzarella before reattempting 8.4/10
Scrambled eggs: first note is the taste, it goes quite well with scrambled eggs. The flavor isn’t so impactful that it overpowers the eggs but it adds something that eggs alone don’t have. The texture was odd, the cheese was very rubbery even after having a chance to melt. I’d probably just use a different cheese or a better mozzarella. 5.1/10

Port Salut $11.99 lb
A very nice German lady recommended me this cheese while I was making my next selection. Thank you German Lady!
This cheese is unique, and quite good all around. I don’t have big fondness for soft cheese, but this one pleasantly surprised me. I wouldn’t eat this cheese by itself, like I do most cheeses. I would however absolutely demolish it with some salami and crackers. The cheese by itself has a very pungent flavor that tastes quite nice, the after taste while not bad isn’t very enjoyable. I’ll likely buy again 6.7/10
Grilled cheese: either I’ve gotten better at making grilled cheese or this cheese is really easy to get a good melt. I hope you know the answer. This cheese melts so well that it’s coming out on every side of this sandwich, I don’t personally mind this however. The flavor is decent, I don’t see this as a grilled cheese because I feel a flavor lacking. All and all a fine grilled cheese, I just feel like I can find a better one. 6.8/10
Scrambled eggs: the taste of the eggs is altered greatly with this cheese, whether it goes in the right direction I’m still trying to figure out. When made with just cheese it feels like it’s lacking something, unfortunately Oscar Mayer bologna was the only flavor I could add; don’t do as I have. I wish instead I had green onions. But bad but not great 5.3/10

This is my lunch for today in order to rate cheese.
I went a little overboard. For 2 eggs I added a half cup of shredded Red Leicester, and a little less than a half cup for the grilled cheese. Loose pieces of cheese I toasted on the outside.
I’d like to add I am lactose intolerant.

Red Leicester $12.49 lb
This tastes like a milder cheddar, if it were made like parmesan. I really like this, I don’t know if I could get away with eating straight cheese but I wouldn’t put it past it. It’s very flaky, with each bite I feel it crumble in my mouth, with a slight resistance in each bite. This is a solid cheese 6/10
Grilled cheese: I feel I’ve made this sandwich wrong. This is a “hard” cheese so I expected it to not melt very well, and so I bought a cheese grater. Unfortunately I did not manage to get the cheese to melt very well. I’m going to try one more time. However, my thoughts will likely remain the same. This is a good alternative if you find cheddar is overwhelming 6/10

Scrambled eggs: this is wonderful, the flavor of the cheese does go wonderfully with the eggs. I do however wish I didn’t add as much cheese as I did (half cup for 2 eggs) the flavor is extremely impactful but still good. I can imagine it tasting better if properly prepared 7/10

Triple Creme $13.99 lb

Note: In order to not buy the ridiculous amounts of Brie Trader Joe’s has I’ve chosen to buy the cheapest and most expensive options they have. My first impression with this, is the cheese to exterior ratio, it’s beautiful. Moving forward I was reminded that Brie goes well with fruit. I will not be rating based on the flavor fruit adds but I will note on the elevation it brings. I have saved a few small pieces of the previous Brie to do a comparison.
“It’s wonderful” my first thought, a little overwhelmed with trying to write my thoughts. I had imagined Brie to be an enemy because of the previous one, but this is fantastic. The cheese melts on the tongue and the flavor is far better than the old one. This one tastes like actual cheese where the other tasted like an old sock. The exterior; what I was most afraid of doesn’t feel like a separate piece of the cheese but part of it. It melds well with the cheese and the flavor is exceptional. This has crushed my expectations 8/10
Note #2: I’ve thrown out the previous cheese, what was four small pieces only one was eaten. In the start of this I told myself I wouldn’t waste any cheese, because mama didn’t raise a quitter but when you have a dumpster fire of a cheese next to an angel kissed blessing there’s only so much you can do.
Note #3: Fruit is a fine addition but I’m not the biggest fan of mixing flavors, I’d rather eat each individually.
Grilled cheese: this was fantastic, compared to a standard cheddar grilled cheese this was leagues better. The flavor; amazing, the texture; amazing, the after taste; amazing. If this didn’t blow a hole through my pocket this would become my new standard of grilled cheese. To delve further in detail the texture; it was like melted butter, wonderfully smooth. The flavor was unlike anything I’ve had before, it was almost sweet? I almost don’t want to make it with eggs, just so I can use the rest to make more 9/10
Note: the only reason this wasn’t a 10/10 was because while it was good it’s such a huge punch of a one specific flavor that it feels like it’s missing something, still recommend.
Scrambled eggs: unlike the Brie before instead of semi melted cheese cubes with eggs this Brie completely melted into the eggs. I believe it to be a good harmony along side the eggs adding a favorable flavor, texture no change. A good cheese to add but surprisingly nothing notable 6/10

Double Creme Brie $7.99 lb
From the selection of 7 different varying brie I picked one I believe to be on the cheaper/lowest expectation.
The exterior of the cheese is my least favorite part, after eating it leaves a bad after taste. However the interior of the cheese is wonderful, a soft gooey texture with a taste I want when I’m not wanting cheddar cheese. 6/10
Grilled cheese: it’s not like your standard grilled cheese. Imagine you’re eating thick glue… that’s the texture. And when the cheese is melted the weird after taste is amplified, however because of the sourdough the taste quickly goes away, like completely. I wouldn’t make it again however I would make it for someone to try if they liked weird food. Weird but good 6/10
Scrambled eggs: while you can taste the cheese it doesn’t add much flavor at all, you’d do better adding any other cheese.
The exterior of the cheese is gross, awful flavor, awful texture with eggs. Taste is average, adds an unfavorable texture 4/10
Note: while writing down my thoughts the eggs had cooled allowing the cheese to congeal, while not changing the texture at all you get hit with an overwhelming flavor of Brie that does not go well with eggs. I will not change the score because of this.
Note #2: This is a lie. After finishing the eggs my stomach is actively trying to eliminate me, and my mouth is left with the awful amplified version of the after taste Brie leaves you with. While not inedible I do not recommend eating. 2/10

Dutch Smoked Cheese $7.99 lb
Obviously smoked so that’s what you’re going to get. However for my personal taste maybe a little too much. It tastes exactly like a slice of salami, very salty. Texture is like your standard cheese; chewy. I believe it’s wrapped in the same casing sausages are wrapped in. Over all a good cheese not one I’d immediately. Better than average 5.3/10
Grilled cheese: Mid, the cheese struggled to meat and the taste wasn’t very great 3/10
Scrambled egg: eggcellent, throw in some onion, salt, pepper, the semi melted texture of the cheese and the taste of salami is great 8/10
