Somewhere in between the re-shoots and baking came Turkish Chicken Pide, a @john_le_turk creation from traditional Turkish Pide, a flatbread usually topped with sucuk sausage or ground meat. • This pide is lighter, but bouncing with flavor: spiced, roasted bone-in chicken breast, then shredded with sautéed onions & peppers, on a blanket of goats cheese and mozzarella. • These three didn't last more than the shoot and a couple of more hours. Something delicious this way comes: a dark and moody re-shoot of my beloved Croatian Almond Roll, a classic sweet yeast bread swirled into a roulade shape. 🌿 The texture is something between a babka and a pound cake. Sour cream ensures a moist loaf and, after years of enjoying super sweet Solo Almond Filling from a can, I finally struck out and made my own-- somewhere between Bakewell Tart filling and Frangipane. Re-shoot #3: Turkish Menemen, a more fanciful mosaic than its overly photographed cousin, Shakshouka. • The simplest of ingredients: onion, hot peppers, tomatoes, a dash of paprika & sumac spice, feta, and a little mozzarella for good measure. The eggs are dropped in, then swirled around just enough.
