Sooooooo. Maintenance came today to repair my stove top. (One of the burners needed fixed). Apparently while they were working on it today, they decided to just replace the whole thing! Yay!! But also, now I dont have a stove to meal prep until Monday….. oh boy.

My breakfast prep for the week!!
Made some sheet pan pancakes (using this recipe), and got a fruit tray on sale to spread through the week! I still have a bunch of fruit leftover too!!

Sheet Pan Pancakes
Ingredients:
2 cups flour
1/2 cup sugar
1 tbsp baking powder
2 eggs
1 & 1/2 cups milk
1tsp vanilla
4 tbsp melted butter
Pancake toppings
Instructions:
Mix all ingredients (except toppings) together in a bowl to make your batter.
Pour into a sheet pan and spread evenly.
Add your favorite toppings to bake into the batter (I did blackberries, bananas, and chocolate sprinkles).
Bake for ~20 min at 425F, or until golden brown.
Cut into servings.
Enjoy! 🥞

Made taco salads (with doritos) for this week!! Still dont have zip locks, so the cold stuff got wrapped in a paper towel so I can take it out before heating the meat. Ingredients include: taco meat, refried beans, cheese, lettuce, tomato, and doritos!

Meal prep for the rest of the week!! Top photos are breakfast burritos cut in half and a chocolate chip muffin I bought and cut up (it was big lol)
Bottom photo is chili that my mom made for me. I wanted to spread it out longer, so I added elbow noodles, cheese, and fritos to mix in and make it feel like more chili than it really is lol!

Hashbrown Breakfast Burritos
Ingredients:
1 bag of 30oz shredded hashbrown
6 eggs
1 bag of shredded cheese
Tortillas (amount needed may vary)
Instructions:
Preheat oven to 400F
Spread shredded hashbrown onto a sheetpan
Whip (mix?) eggs in a bowl and pour onto hashbrown
Sprinkle cheese on top
Mix everything and spread evenly on the sheetpan (I just mixed it on the pan directly)
Bake for ~20 minutes (ensure egg is cooked at minimum)
Pull out of oven and split hashbrown mix into burrito filling sized portions
Fill a tortilla with a portion of hashbrown mix, wrap, add cheese to where the tortilla closes, place back on pan, repeat until all the mix is used
Place tray with filled tortillas back into oven for ~10 minutes
Enjoy! 🍳
