please drop your soup recipe beloved <3
when i make this soup during the week i use a rotisserie chicken because it cuts the cook time in half, but you can use raw chicken if you’d prefer and cook it yourself beforehand
chop 1 yellow onion, 1 shallot, 5 cloves garlic, 1 large carrot, and 3 stalks of celery
add onion and shallot to a pot with olive oil and cook until translucent, then add garlic, carrots, celery, salt and pep, and cook for a few minutes making sure to not burn the garlic
add 6 cups of chicken stock or water and bouillon (i do a mix of both), a few sprigs of thyme and a few bay leaves. i also like to add like thighs and wings from the chicken at this point with the skin on for flavor
bring to a boil, then lower to medium heat and cook until your veggie are almost to the softness of your liking
remove chicken and herbs
add pasta of your choice (you can also cook pasta before hand and add it at the end if you plan on storing long term)
cook until pasta is just al dente, then add your shredded rotisserie chicken and cook for a few minutes
plate and serve with parm!!
