In search for a complete set of travel knives to cook with me wherever I go so I am trying many brands to compare. After a great “Strum Pluckin Good LIVE show today with @drbillssyrup, I had a suprise delivery! . This Shun premiere boning knife I bought has moved to the top of the list so far. . This @shuncutlery Japanese Gokujo (boning knife) is a work of art and razor sharp! One of the most beautiful for sure. . This awesome blade features a core of extremely hard VG-MAX "super steel" clad on each side with 34 microthin layers of stainless steel. The hand-hammered finish (tsuchime in Japanese) is stunning. . Walnut-finish PakkaWood handle has a two-position design,and the perfect balance point for a pinch grip. . Each knife is handmade in Japan by skilled specialists, requiring at least 100 steps to craft. . We’ll see what finally makes the list. So many out there but I think this is where the cream starts floating to the top with high quality Japanese knives. This was the meatiest, no fat, juiciest ham I ever made. 🥂🍾MERRY CHRISTMAS TO ALL OF YOU IN THE IG BBQ FAMILY. MAY YOU AND AND YOUR FAMILY BE SAFE AND ENJOYING ALL WE HAVE TO BE GRATEFUL FOR THIS HOLIDAY SEASON” . “Merry Meat Christmas” Ya’ll! This 3.5lb grass fed Black Angus Chuck Steak was juicy and tender and it’s not easy getting a fat thick chuck cut that way and still keeping it as a steak and at rare/med rare. . HOW I DID IT? (2 day process) . First, cold smoked the chuck for 2.5 hours with @knottywoodbbq 100% Almond pellets on my @yodersmokers YS640 modified for my cold smoker box. I then dry brined for 24 hours using my Christmas present (ok I got it a few days early!) of @oceanstatepepperco “Cow-Abunga” and “Java-Que” spices. I used a 50/50 mix to make my flavor baby and set it in the fridge for 24 hours. . Remove from fridge and then I added my marinade of olive oul and red wine vinegar to the meat for another 24 hours. . THE COOKIN PROCESS . Using my MeatStick @themeatstickig I set up my wifi-bridge to monitor my slow reverse sear using @bbcharcoal briquettes on mu @pkgrills PK360 in an offset configuration. I dialed it in @225 and let the meat rise to 130F. . “UKE BURNER TIME!” . I then went live on IGTV (check out the Uke Burner and comment if you like it!) and fired up my uke burner for a perfect sear and amazing crust. It’s game on with this gorgeously seasoned 3.5lb grass fed Black Angus chuck steak. LOOK AT THAT COLOR from my mixture of @oceanstatepepperco Cow-Abunga and Java-Cue spices. If you missed me cold smoking this bad boy on my modified @yodersmokers YS640 with my cold smoker attachment you can check it out in my feed or on IGTV. . This was dry brined 24 hours, then marinated in some olive oil and Italian red wine vinegar. Keeping it wet, I cold smoked it for 2.5 hours in @knottywoodbbq 100% Almond Wood smoke. Brought it inside and wrapped tight in 4 layers of cellophane wrap to let the meat rest and have that smoke permeate all the way to the core of the meat. After it’s 24 hour nap it’s cooking time today on the @pkgrills PK360 for some offset reverse searing and some serious #scintillation . . . . Thanks @thegirlthatgrills for the awesome recommendation to give these spices a go. Akaushi Wagyu Brisket Flat in the house! This brisket flat was the juiciest brisket I have ever had in my life! @bobbyflay throw-down brisket right here! . HOW THIS WAS COOKED . I started out cold smoking the flat for 2.5 hours on my @yodersmokers YS640 with my cold smoker attachment (IGTV postings). I used a 60/40 mix of @knottywoodbbq almond and plum pellets to deliver the luxurious smooth, sweet smoke to this beauty. . The flat was then brought inside and seasoned well with my own version of SPG and then wrapped in a cellophane mummy wrap for 24 hours to allow that smoke to absorb throughout the meat and to pull in and smoke that SPG for that fatty edge goodness. (DO NOT LOOSE ALL THE FAT DURING YOUR COOK). . Then 40 hours at 140F Sous Vide using my @joule. Pull the flat, drain out the incredible ajus for later use, and rest the brisket for 15 min while drying both sides well. . I then took it outside for a little weed burner action (IGTV in my feed) for the final searing to reach the #scintillationstate . Double wrap with foil for 1 hr and then slice the #scintillation. **SEE FAT? You want that!** This is insane flavor that melts in your mouth like an ice cube on a hot summer day with that crispy seared edge. This was like my Akaushi tri-tip as far a my preferred way to cook large cut wagyu. Sous Vide is the path to perfection with this incredible meat. Just finished of the last of my sous vide #akaushi tri-tip and have a akaushi brisket I am finishing today after 40 hrs in sous vide. . This tri-tip was cold smoked for two hours on @knottywoodbbq almond and plum pellets which was a 40/60 blend. Yesterday was the Scallop Waterfall but to get there you need the “Scallop Sailboat” . I built my boat with a beautifully cooked tender ocean scallop. My hull is a piece of the incredible Bill-E’s Bacon @billessmallbatch from Fairhope, Alabama and topped off with @georgiaearlesbbqsauce. Don’r forget the garnish for the sail. We ended up grounding on shore and got some Aleppo & Black Pepper sand all over our boat! . We blew the barn doors off on this Akaushi Wagyu tri-tip! How did I get edge to edge rare/med rare at 129°F? 🤠 I cold smoked this beauty on IG live for 2.5 hours using @knottywoodbbq mix of Almond and Plum pellets for an earth shattering smokey flavor that I cannot describe. . I then used my SPG rub and hit it all over with extra pepper and wrapped it tight in clear wrap and let it sit overnight which let that smoke permeate and move about the meat. . Akaushi was placed in Sous Vide for 7 hours at 129°f. Removed from Sous Vide using my @joule and dry completely, resting meat for 10 minutes. . I then used my @hexclad (not just for Michelin Star chefs!) and used avocado oil on high to sear the entire surface 30-45 seconds per side (two rotations) for a total of about 4 minutes of sear. . Take out of pan and let rest 10 minutes (do not cover or wrap!) and do not cheat on the 10 minutes. . Slice for a jaw dropping experience.
