His finger magic is so cool

I've been re-watching the series and thought, what's happening to Ole's hands? Why all those strange movements? As if he was "feeling" the things around him with his hands, when he enters the house, leaves the hammer, when he's heating the knife in the fire to remove Gator's eyes, or when he's cooking at the end with Dot. Is it something deliberate, or is it a defect in Sam Spruell's hand tendons?
We noticed this in his official character photo, before the premiere, where it looked like he held his middle finger down. I found an album by Westside Gunn that featured a guy named Eastside Flip on the cover, making the same sign. At the time, I thought maybe it was an East/West Wizard of Oz reference, but honestly I have no idea if that was the case. Maybe Sam Spruell just decided to do it. His hands reminded me of dragon wings when he was performing his ritual in the dugout at the ranch. Maybe a reporter will ask him about it at some point.
