Gulab Jamun – from the origins to the present
Gulab Jamun is one of the most popular of Indian desserts, but quite surprisingly its origins do not lie in India. It originated in mediaeval Persia (now known as Iran) and was derived from a fritter made from refined flour dipped or soaked in scented sugar syrup. The Arab dessert Luqmat al-Qazi or Luqaymaat is very similar to the Gulab Jamun.
The word is derived from the Persian word Gul (meaning flower), ab (meaning water), referring to rose water which is very widely used in Persian cuisine and Jamun a South Asian fruit similar in size and shape.
Gulab Jamun is traditionally made by kneading Khoya (full cream milk reduced to approximately a 5th of its original volume), refined flour and milk into soft dough. Small (roughly an inch in diameter) round balls, deep fried in ghee or clarified butter to a golden brown shade. These are then soaked in cardamom flavoured sugar syrup and served hot. A popular variation is Gulab Jamun with vanilla ice-cream.

Chicken Tikka Masala – tracing the roots and why it is so popular
Perhaps the most popular of all Indian curry based chicken preparations, the ubiquitous Chicken Tikka Masala with its succulent tandoor grilled chicken swimming in a delicious creamy orange gravy (curry to all ye Indian gravy fans) was supposedly developed in the erstwhile UK.
Funnily, its origins are greatly debated amongst the fanatics, some of whom vaguely say that it is the England’s take on the famed Indian curry adapted to the rather bland (read less spicy) palate; a considerable number firmly hold on to the view that its roots are solidly entrenched in India while there are a few who think it is a Scottish dish.
Food critics (I mean that exclusive community of food critics/bloggers who have for long studied the Indian cuisine) say that it originated in Punjab in the late sixties and was an accidental outcome of a chicken gravy gone awry, and has had a lot of improvisations over the last half a century of its existence.
As an afterthought, I personally feel that the creamy base of the sauce was invented by a chefstein (Einstein amongst chefs) to cater to the delicate tummies of those who abhor hot and spicy food but still want a tantalizing tingle on the tongues.
