Sarek tells Michael that he wanted Spock to learn empathy from her. I can believe that, but I think Sarek’s primary motivation for adopting her was to prove that humans are capable of vulcan-level achievement. 
Sarek didn’t marry Amanda because he liked or preferred human culture. In fact, he makes his wife and son conform to Vulcan cultural norms. Sarek’s actions suggest that, like most Vulcans, he believes Vulcan culture is superior. That being said, Sarek does not believe that his son is inferior, a belief that is not shared by most Vulcans. Living in a time when other Vulcans call him a traitor for marrying a human and think Spock is disadvantaged by his human heritage, how could Spock ever be treated as an equal member of Vulcan society? 
Enter Michael. Sarek’s argument is that while Vulcan culture is superior to Human culture(s), Vulcans are not themselves inherently superior to humans. The best way for him to prove this is to adopt a human and teach her to be just as good if not better than most Vulcans. There is no indication that Sarek was familiar with Michael’s family or that he’d ever met her before her parents died. I believe that Michael was specifically chosen by Sarek because of her intelligent parents and because she was older than Spock. The experiment would be more effective with a younger child, but Sarek wanted someone older, because the whole purpose of his experiment is to pave the way for Spock. If he can prove that a human can be assimilated into Vulcan culture, there will be less resistance to a half-human assimilating into Vulcan culture. Michael is a supporting argument. 
Given all this, it’s no wonder that, when forced to choose between Spock and Michael for the Vulcan expeditionary group, he chose Spock. The entire purpose of Michael’s presence on Vulcan is to forge a path for Spock, not to steal opportunities from him. 
Sidenote: I feel like this makes Sarek’s saving Michael’s life with the soul-graft a little less “aww so selfless, good dad” and more like “Yeah you BETTER save her, she’s dead because you were trying to prove a point oh my GOD!”

Its crazh thinking of how spock and other aliens have to adjust to earths/starfleets calendar. I think they handled it well with ds9 bc bajorans have like a 27 hr day iirc and the station adjusted to this but its never really addressed in tos, its earlier and that wasnt a consideration and spock is the only vulcan in starfleet and maybe one of few few aliens on the enterprise iirc. So he has to do a lot of adjustments himself ie put in vulcan meals that has all the subtleties humans miss when they engineered them in to be inclusive, decorate his room in a standard vulcan way (mb all the curtains he has are really normal or red is the standard room color not white and solid walls etc like w human built ships). But also their time schedules like after years of vulcans 15 hr days or 30 or i dont know what they have he has to figure it out and adjust and do it by himself and experiment with being exhausted on alpha shift two times a week or something for a while it settles into his skin. Plus he needs less sleep does he just hang out and recharge in his room in silence or put recordings of his favorite shows or listen to his moms university lectures (they often ask her to visit and give speeches on graduations or short term courses on interspecies relations or etc) just so he can hear her voice or plays the lyre (his room is sound proof or maybe not and passing crew members can hear it through the doors and pause and take it in). Or maybe he has a midnight snack of something he programmed in specifically for nights like these i hope he gets enough rest. Spock deserves to rest.

Headcanon du jour: What if most Vulcan’s aren’t massively bigoted space racists?
The majority Vulcans we’ve met have essentially been Vulcan Royalty. You know, the institution which, here on Earth, is notorious for being bigoted, backwards, and inbred. 
Tuvok and T’Lynn aren’t like that. 
But then, they’re not direct descendants of Surak, son of a galactically famous ambassador, born and raised in the capital city of Shi’Khar, heirs to a massive estate on the homeworld, and educated in schools where admission to the elite Vulcan Science Academy is taken for granted. 
Spock is the adult Vulcan equivalent of Prince Archie, if Harry hadn’t left The Institution.
Of COURSE we get flashbacks of Vulcan kids bullying Spock! The Learning Center is equivalent to the sort of British Boarding School where they sent King Charles. These places are meant to break kids. They’re all about exclusivity and maintaining the elite status quo. After all, maintaining tradition is only logical, and holy shit do Vulcans love their rituals - even if those rituals include hardcore school bullying. 
Look at how the British royal family and media treat Meghan Markle. Now look at how all the Vulcans in Spock’s orbit treat Amanda Grayson. If Amanda had married a nice Vulcan biologist somewhere out in the colonies no one would have cared, but no, she married the single most high profile Vulcan Royalty of his generation. Plenty of Vulcans were no doubt jealous she snatched up that prize of a bondmate, then masked it as criticizing his choice for being “illogical in the extreme.” 
I like to think that most Vulcans are just out there living their best IDIC lives. 
Meanwhile, the S’chn T’gai family is out there living by Royalty Rules in everything they do. 
Mutiny? Pshaw. Our great grandmother T’Pau knows a guy who knows a guy who will make the paperwork disappear. Stealing a ship? Well, the family could buy it outright, but that would be gauche. Starting a cult? Sybok is a direct descendant of Surak himself. Who better to lead a revolution?

I love that in The Pandora Principle, Spock basically does a retelling of Amok Time to Saavik and her first reaction is "Glad both you and the captain made it out alive" and then "T'Pring is a bitch" (literally, she's calls her that- I'm not kidding)
So real of her
Also the fact that Spock told her of the Entreprise's various mission makes it so that she's basically a TOS fan, in the TOS universe-

I finally read The Pandora Principle (in one day! I hadn't done that I ages!) and I just adore Spock's single dad arc and Saavik. Every thing about Saavik.
Spock threatening to blackmail to get the kids to be raised on Vulcan, legendary.
Also "The Photon Torpedo", amazing, and Spock offering to go see the Baseball game, dad powers are unmatched.
I love that Jim is just having an existential crisis in the Vault the whole time about his career while also being scared for his ship and crew.
McCoy's initial reaction to seeing Saavik with Spock being "oh no now there's two of them", unmatched, hilarious
"Look up, Little Cat, and see the stars" so powerful.
Also Saavik nerve pinching Spock toward the end and doing the dangerous mission is giving Spock nerve pinching McCoy and going into the Warp Core during The Wrath of Khan.
I wanna point out McCoy being so gentle with Saavik and getting her to medbay after the whole ordeal and explosion on Hellsguard, so great to see, even tho both he and Saavik didn't start that great.
Also the conclusion with Saavik going: Mr. Spock, I have a question. So full circle
