With my line of work (bartending in a smaller town, VERY republican) I have to bite my tongue on a daily basis when a customer says something racist/transphobic/homophobic and my question is what if i were to lie and say that i am trans when someone makes a nasty comment to put them in their place? Im a cis gay man so it would absolutely be something i lie about on the spot only once, but TBH my main concern is if it would be hurtful to a trans person?

i don't think it hurts people necessarily, but worst case you get caught in the lie and then that does make everyone look kind of bad. like i think in that situation it would be just as effective imo to say "i have a friend who is trans--" and then whatever rhetorical strategy you need to use to get republicans to shut up and/or listen to you and possibly change their mind.
