ATTENTION AMERICANS & CANADIANS!!!
There is a 1995 movie about our countries going to war, and it is FUCKING HILARIOUS!!!
The Plot: The president and his cabinet realize that when there's no war, people actually pay more attention to policies. So, to fix this, they look for a country they can start another Cold War with to help bring up the president's polling numbers in time for the next election.
The Title: Canadian Bacon
Starring: John Candy
Tumblr media
And THE BEST PART? Alan Alda plays the president

If you haven’t watched it yet, I highly recommend. We all could use a laugh right about now.

How, with everthing that is going on, has Canadian Bacon not been mentioned yet?

Canadian Bacon: A 1995 comedy film written, produced, and directed by Michael Moore which satirizes Canada–United States relations along the Canada–United States border.
Did no one watch this movie? It is more relevant now than ever! It amazes me that I have not seen this movie mentioned at all. Shame on all your houses.

Cognac Cockerel and Mushroom Pie
Tumblr media
Deliciously warming and indulgent, this creamy Cognac Cockerel and Mushroom Pie makes a hearty dinner on a cold Winter night (and also good use of leftovers!)
Ingredients (serves 3):
1/2 tablespoon olive oil
2 slices Canadian bacon
1 tablespoon unsalted butter
1 tablespoon olive oil
a dozen button mushrooms
1 large garlic clove, minced
1 teaspoon dried thyme
a small onion
half a beautiful Roast Cockerel
1/2 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1 1/2 tablespoon plain flour
1/4 cup good quality Cognac or Brandy
3/4 cup semi-skimmed milk
1/4 cup double cream
270 grams/9.5 ounces Rosemary Pastry
Generously butter a pie plate; set aside.
Heat olive oil in a large skillet over high heat.
Once hot, add Canadian bacon slices, and fry, a couple of minutes on each side, until just browned. Transfer fried bacon to a small plate. Set aside.
Add olive oil and butter to the skillet, and return over the flame.
Cut button mushrooms into thick slices.
Once the butter is just foaming, add sliced mushrooms, and sauté, about 3 minutes, until mushrooms soften. Stir in minced garlic and dried thyme and cook, a few minutes more, until mushrooms start browning.
Peel and finely chop onion, and stir into the skillet. Cook, about 3 minutes.
Remove Roast Cockerel meat from the bones, roughly chop, and stir into the skillet.
Season with fleur de sel and black pepper.
Roughly chop reserved bacon, and stir back into the skillet.
Sprinkle in the flour, and cook out, 1 minute.
Then, deglaze with Cognac, and gradually stir in the milk, until the sauce thickens and coats the wooden spoon. Stir in double cream.
Remove from the heat and allow to cool completely.
Preheat oven to 200°C/395°F.
Spoon Cockerel and Mushroom filling into prepared pie plate, levelling with the back of the wooden spoon.
Onto a lightly floured surface, roll Rosemary Pastry out into a large circle, roughly 30cm/12″. Transfer Pastry circle onto the pie plate. Trim the edges and crimp.
Break the egg in a small bowl, and whisk with a fork.
Generously brush the pie lid with egg wash, then cut a hole in the middle.
Place pie plate in the middle of the hot oven, and bake, at 200°C/395°F, 30 to 35 minutes until pastry is golden brown and crisp.
Serve Cognac Cockerel and Mushroom Pie hot.

A stack of fun to kick off your day! Layers of cooked collard greens, scrambled egg whites, and sauteed Canadian bacon are placed on top of toasted whole-grain bread. Cheddar cheese is sprinkled on top, and everything is heated through and melted.

Canadian Bacon
Canadian Bacon sports a big happy photo of John Candy on the cover (At least on this edition). There’s been previous ones that look more like propaganda posters, but this one’s definitely trying to sell the film off of Candys image. They succeeded too, that’s entirely the reason why I bought it. Nevertheless, as the credits roll and I see names like Rhea Perlman, Kevin Pollak and Alan Alda, we…
