Ingredients: 1 cup quinoa, rinsed. 2 cups water. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1 avocado, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh parsley, chopped. Juice of 1 lemon. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until quinoa is cooked and water is absorbed. Remove from heat and let cool.
