Uncle doesn’t want to mess up his minimalist kitchen so he goes to Duck Duck Goose and regularly orders the Chicken Congee made by his favourite nephew Chef Willie @nguyenwillie. Today Willie replaced the pork with deep fried chicken and a stir-fry of greens. None of the white wallpaper paste shit that you get from most Chinese restaurants. I’d rather luck flocked wallpaper. Yessika sent out a chocolate sponge cake, layered with chocolate mousse, topped with fried dried raspberry and walnuts. HOME COOKING // Chicken & century egg congee with fried shallots, fried garlic, chopped coriander and spring onions as garnishing. Secret ingredient: dried scallops. Used four chicken drumsticks and four chicken lovely legs. 1 cup of jasmine rice. Other ingredients: salt & pepper, bit of soy sauce, Penang Ghee Hiang sesame oil, ginger slices, lots of chopped spring onions and coriander. Tip: Finish off with cracked eggs to make the congee creamy. As a kid I got teased alot for mushing up my food together instead of eating it in portions with rice. I didn’t care then and I’m glad I don’t care now. Because, omg I mixed my leftovers and stumbled on some delicious mix of homemade ginger-garlic chicken and rice congee with fried eggplants in tamarind sauce. Sometimes, it's also topped with yellow chicken broth and 'kerupuk' (Indonesian-style crackers), and added with 'sambal' or chili paste that served separately. It's a favourite breakfast food in Indonesia. Because this food is always served hot and with a soft texture, 'Bubur Ayam' is also known as 'comfort food' in Indonesian culture. The soft texture of the rice congee and boneless chicken also makes this dish suitable for young children or adults in convalescence. The origin of 'Bubur Ayam' was probably derived from Chinese chicken congee.
