HOME COOKING // Hainanese Chicken Rice using pullet chicken (aud27.99) purchased from Wing Hong @whfoodretail , Northbridge. Served with chicken rice and two types of dipping sauces and broccoli for a balanced meal. Method: Prep for chicken: Wash throughly then pat dry. Season with salt and sesame oil on the skin and put some ginger slices and spring onions inside the cavity. First boil water in a pot then immerse chicken into the pot when the water is boiling with water fully covering the chicken. Poach the chicken for 20 minutes on low heat then turn off the heat and leave it in the pot with lid on for 10 minutes. Chicken rice: Using a rice cooker, wash rice and then add minced garlic, minced ginger and chicken broth from poaching the chicken - include the chicken oil from the poaching liquid. GIFTED: HOME COOKING // Seafood congee using @austral_fisheries ‘s Skull Island Prawns, @clearwaterseafoods scallops (thanks @samuel.colvin !) and Scampi from @seafresh_innaloo (thanks @thisisangelang ! ) 🥰😘😍 Method: 1) Use one cup of jasmine rice and cook slowly, stirring occasionally until it becomes congee. Add sliced ginger, chopped spring onions and scallops into the congee. Season with salt and pepper. 2) Steam prawns and scampi on the second tier of the steamer, letting the sweet juices flow down. 3) Add more chopped coriander and spring onions as garnish. Simple recipes for rainy days. ✅❤️Super lucky to be gifted these ingredients to cook with. HOME COOKING // SW’s imitation Spicy Miso Pork Udon, using udon from Hifumiya which they had kindly gifted to the public on Friday night due to the lockdown. ❤️ It’s so much easier eating at restaurants and I really appreciate the hard work they put in in mastering their craft and serving delicious udon. Had the instructions of cooking the udon but I can’t get the texture to be like theirs. HOME COOKING // Nasi lemak sans ikan bilis (fried anchovies) with yellow curry chicken & potato. Cheat’s version using pre-made sauces and not made from scratch. To make the Nasi Lemak (6 serves): Add 3 cups of jasmine rice, 1 stalk of lemongrass, 3 pandan leaves bundled together and a can of light coconut milk (165ml) into the rice cooker. Curry chicken: 6 chicken drumsticks, 3 potatoes (sliced) and @turbanchopsticks ‘s Yellow Curry Paste ( #gifted ) 🤤 Nasi lemak Sambal paste: Used the brand Chilliz - quite good. Just a tad spicy. HOME COOKING // Last Saturday’s meal prep: Grilled sambal skate with red onions, okra and curry leaves; Curry Red Emperor cutlet with eggplant, tomatoes, tofu puffs. Sambal sauce was from @suku_freo - so spicy and good. Skate was purchased from @atlanticseafoodperth in Northbridge. Wanted to get banana leaves for a more authentic look but my local grocer only sell it frozen by the pack - there were at least 20 leaves per pack - would have been surplus to needs so my sensibility won over “nice presentation”. It doesn’t look too bad now, does it? HOME COOKING // Beef Short Ribs from @wabigbutcher in BBQ Sauce – slow cooked short ribs using the recipe from Nagi @recipe_tin 🥩 Some tweaks: used honey instead of brown sugar and added HP sauce; also added ground coriander seeds and Cajun seasoning instead of mustard powder, cumin powder and cayenne pepper as I didn’t have those ingredients at home. Pressed for time so instead of following the recipe’s timings, I experimented with baking two hours in the oven covered with aluminium foil first then added another hour in the oven uncovered and then forty five minutes in the pressure cooker. Love the super fresh Skullies - these are snap frozen in boxes by @austral_fisheries and taste so good. Pan-fried the shell side first to crisp up the shell. HOME COOKING // first attempt at 潮州卤鸭 Teochew Braised Duck using the recipe from YouTube’s KL Liew (Aunty Liew) @klliew06 - recipe notes on the last pic. Steps involved: 1) Use a generous amount of salt to rub & massage the duck to clean it; rinse off the salt; put washed duck into a pot of cold water and let it come to a simmer & drain the water (apparently this removes the impurities and wax from the duck skin). 2) Put into fridge to dry the duck 3) Marinate the duck using “ingredient B” list and let it marinate in the fridge for at least two hours 4) Prepare the braising liquid (ingredient A list except for eggs and tofu) and put the marinated duck in when the braising liquid simmers 5) Turn the duck around every 15/20mins - braiding liquid should be simmering for 1 hour & 20 minutes 6) Turn off the heat and leave duck in the pot for another 20 mins with the lid on 7) Take duck out to rest for 20 mins before deboning 8) Braise egg hard-boiled eggs and hard tofu for 10-20 minutes in the braising liquid Surprisingly the duck wasn’t as salty as I thought it might be - can add more soy sauce than the recipe or marinate it overnight if you want it to be more flavoursome. Pretty satisfied with this first attempt as the duck turned out just nice and not overcooked. Thanks Aunty Liew for the recipe - she’s a retired Malaysian auntie who shares lots of homecoming videos on YouTube - all of which is being videoed and edited by her husband Uncle Liew. HOME COOKING // My version of Beef Shakshuka with eggs and Guacamole for when I’m lazy to cook. It’s always handy to have canned whole tomatoes, diced tomatoes, chickpeas, beans and tomato purée in the pantry. Start off with frying chopped onion & garlic till fragrant in the pot (I like to add chopped bacon too) then add chopped carrots, brown the beef mince; add in aforementioned canned tomatoes, chickpeas, beans, tomato purée, sliced mushrooms, spices (paprika, thyme leaves, ground cumin) and s&p. Let it slowly simmer and crack eggs in when nearly done. Garnish with coriander. Guacamole recipe: avocados, chopped tomatoes and red onions, lime juice. HOME COOKING // Chicken & century egg congee with fried shallots, fried garlic, chopped coriander and spring onions as garnishing. Secret ingredient: dried scallops. Used four chicken drumsticks and four chicken lovely legs. 1 cup of jasmine rice. Other ingredients: salt & pepper, bit of soy sauce, Penang Ghee Hiang sesame oil, ginger slices, lots of chopped spring onions and coriander. Tip: Finish off with cracked eggs to make the congee creamy. SG CHILLI MUD CRAB // Lunch is served. First attempt at Singapore Chilli Mud Crab using mud crab (aud54.95/kg - my crab was aud37) from Atlantic Seafood Market, Northbridge and the sauce pack by Prima Taste Singapore (aud9.35) purchased from VHT, Northbridge. Cheated using a pre-made sauce packet. Wasn’t going to experiment just yet in case it went wrong. The sauce is spicy, flavoursome and yummy - I think I added too much water at the start.
