It's #timbertuesday!
With the temperatures dropping, we sometimes rely on a "Canadian Candle" to keep the coffee and ourselves warm up at the log yard. What is a "Canadian Candle" you might ask?
A Canadian candle, also known as a Swedish torch or log candle, is a simple and effective way to make a self-sustaining fire.
Using a chainsaw, we make four cuts into the log from the top, dividing it into eight sections. Cut down about three-quarters of the way, leaving the base intact. Place kindling or fire gel into the cuts at the top of the log. Light the kindling or gel to ignite the log.
As the kindling burns, it will ignite the inner parts of the log, creating a chimney effect. The flames will draw air through the cuts, sustaining the fire for several hours.🔥

Liberated after six-months in bourbon barrels, Backwoods Brewing releases The Stumbler Imperial Stout November 10th.

Carson, WA (November 9th, 2017) - Backwoods Brewing Company is releasing a new bourbon barrel-aged stout next week, named The Stumbler. Not to be confused with their Imperial Honey IPA, the Bumbler, The Stumbler is a Russian Imperial Stout aged for 18 months in Heaven Hill Bourbon barrels. This is the longest barrel aging Backwoods has ever done.
“Prior to this, our longest barrel aging has been around 6 months,” said Jordan Tanasse, head of sales for Backwoods. “We get excited to try the beer and share it, so we have only ever had the patience for a 6-month aging. This time around, we used as much restraint as we could and held out for 18 months. When we finally decided it was time, everyone on our production team was ecstatic!”
The Stumbler gives off notes of vanilla, charred oak & brown sugar, and follows with a light smokiness. It clocks in at 12% ABV and 35 IBU. The base stout is comprised of four different malts, including roasted barley and chocolate malt.
Sourcing the barrels to age the stout was no easy feat. Kevin Waters, Backwoods’ Brewmaster, was able to order 12 barrels altogether for this beer (each barrel was filled with 50 gallons of stout). “Barrels are getting extremely expensive and hard to find. Generally, you have to do a buy-in with several other breweries in order to meet the distillery’s minimum. For this shipment of barrels, we teamed up with Everybody’s Brewing and Breakside Brewing,” said Waters. “There is also no guarantee that the barrels will function properly and hold the beer without leaking,” added Waters. “Lucky for us, the barrels held strong for a year and a half.”
The Stumbler will officially be released Friday, November 10th, at Backwoods Brew Pub in Carson, WA. It will be available in 22oz hand-waxed bottles, and on draft.
Following the pub release, it will be made available, taphouses, independent bottle shops and specialty markets in both OR and WA. Only 90 cases are going out the door, so get 'em while you can!
About Backwoods Brewing Company - Backwoods is located in the heart of the Columbia Gorge, in the small town of Carson, WA. It was founded by the Waters family in 2012, as a single-barrel brewpub. They now operate on a 20-barrel system in their newer Stevenson facility, kegging, canning and bottling beer for the WA/OR markets. Their focus is on balanced beers, such as the flagship Logyard IPA. Some of you may have heard of @backwoodsbrewingcompany, a small independent brewery out of Carson Washington, founded by a father and his sons. They're best known for their Flagship, Logyard IPA and their seasonal, the Blueberry Wheat. This brewery started out as a small one-barrel system and eventually grew into the brewery they are today. And it's worth noting that they just opened a new brew pub in the Pearl District of Downtown Portland. The smell on this flavored ale is blueberries and sweet malty goodness. There is a slight bitter finish from the hops. It has a light to medium mouthfeel that is complimented by the light carbonation. Backwoods Brewing opens a new taproom in Portland's Pearl District
Carson, WA ... Backwoods Brewing Company will be bringing its delicious beers and hearty food menu to the Pearl District of Portland, OR. Effective June 12th, Backwoods began work on a new pub on the corner of NW 11th & Everett Street, where Pearl Tavern previously resided.
“We have a lot of visitors stop by our pub in Carson to experience the backwoods scenery, as well as the delicious food and beers we have to offer,” said Jim Waters, owner of Backwoods Brewing, along with his wife, Debbie Waters. “We look forward to bringing that same backwoods culture to Portland.”
Backwoods Brewing is about to enter its 7th year of business, and is ranked in the top 25 largest breweries in the state of WA, according to WA Beer Blog. However, there are still plenty of people who have yet to try their beer or visit the pub in Carson. “Our hope is that a pub in the Pearl will make it easier for folks in the Portland metro area to experience the same Backwoods hospitality that so many have already found after a good hike out in the Columbia River Gorge,” continued Waters.
Backwoods’ Pearl location will boast their seasonal, special release and core brews, such as Logyard IPA, Copperline Amber and Blueberry Wheat. It will also feature local ciders and wines on tap, as well as a vast selection of spirits for craft cocktails.
Like Backwoods’ Carson pub, the food menu will focus on sourcing local ingredients and producing as much hand-made goods as possible. “We understand that this isn’t Carson, and the selection in Portland is vastly larger in comparison,” said Steve Waters, CEO of Backwoods Brewing. “We will keep true to our priority of using top-notch local ingredients, and will aim for a menu that stays true to who we are at Backwoods: fun, delicious, and appealing to all ages.”
When asked whether he thinks Portlanders will enjoy Backwoods’ backcountry feel and homestyle hospitality, CEO Steve Waters replied, “I think we’ll really resonate with the Portland crowd. We learned a long while ago, through interactions with hikers, bikers, and campers we see in Carson, that there’s a really broad appeal to our rustic style. We’re finding out more every day that there’s a little bit of Backwoods in everyone.”
Kurt Huffman, owner of ChefStable Group and part owner of Pearl Tavern, is happy to be passing the space on to such an exciting local brand. “We love Backwoods and we couldn’t feel better about who will be taking over this amazing space. Ryan [Magarian, fellow owner of Pearl Tavern] and I are already making plans to come have a beer and see what Backwoods has done with the space once they open.”
Magarian also recently posted on Facebook that he expects Backwoods’ new location to “offer the neighborhood a super awesome place to enjoy each other’s company and some rad beverage and food to boot.”
Backwoods Brewing is excited to join some great breweries from the Northwest, such as Deschutes, Rogue and the newer Von Ebert brewery, all of which are located in the Pearl District. When asked about the increasing number of breweries in Portland, Kevin Waters, Brewmaster for Backwoods, commented, “Good beer is good beer no matter what, and our corner of the Gorge is becoming well known as a mainstay on many tap lists in the Portland area as it is. We’re excited to show everyone what we’re all about!”
Backwoods is aiming to open doors at the new location late June/early July. In the meantime, they’ll be transforming the space to have that backwoods feel that so many people have come to know and love from their experience with the original pub in Carson. The Carson location will remain open and continue to serve its local customers, as well as the many visitors that come out after a hike or camping trip.
When the new Pearl location does open, it will welcome all ages, and offer both lunch and dinner menus. Hours of operation will be 11:30 – 10 PM, Sundaythrough Thursday, and until 11 PM Fridays & Saturdays.
