i bought the moosewood cookbook from thriftbooks and ended up with the 2000 edition and man. every other recipe intro talks about how they've reduced the amount of oil or the number eggs or whatever. which, way to brag about making your food taste worse, but also its crazy to me because extra virgin olive oil and eggs are generally considered health foods now and it has not, in the grand scheme of things, been very long at all. it's kind of insane how little we seem to know for certain about nutrition.
