Okay so I have this really boring headcanon about Kylo Ren’s fighting style and the end fight with Rey.
He doesn’t know how to fight other force users. Or to put it better, he is really out of practice. So he hasn’t really fought someone who is skilled at using a lightsaber since he was Luke’s student and that was years ago. I don’t really see Snoke sparring with him and none of the other knights of Ren seemed to have lightsabers in Rey’s vision. (They might just have not been using them.) 
Even if the other knights do have lightsabers Kylo Ren is the most powerful force user out of them and is probably used to being the superior fighter. (Plus is wasn’t like we saw him practicing everyday.) He’s used to just being able to beat someone while putting in minimal effort. (See his fight with Finn -who is totally force sensitive, but a rant for another time- even injured he was toying with Finn and being lazy, the second Finn got in a good hit, Ren got angry and finished the fight.) 
Rey however is not only a strong (all be it inexperienced) force user, she is a experienced fighter. When she used her staff weapon in conflict it wasn’t just to practice, it was to survive. She knows how to fight and how to adapt.
I also kind of saw the fight as a bit of a parallel to Obi-Wan and Darth Maul’s fight in The Phantom Menace. The Padawan/inexperienced force user against a dark force user, who had just killed/nearly killed someone close to them. The dark force user a little too cocky? Which doesn’t work out too well for them. 
I don’t know. Ren is used to winning by default. Finn is force sensitive. Rey’s a Kenobi. 
Just some thoughts until proven wrong.
