Just remembered something: Goku fought an Immortal being TWICE

A non-canon fight against a demon that gained immortality through Dragon Balls, Garlic Junior, which ended with him being sent to an alternate dimension.

And canonically against one deity apprentice named Zamasu, who would've perished to Goku's Hakai technique (essentialy it's just... "destruction"). However he was ultimately erased by the Grand Zeno, of whom I've spoken in the comments.

So he's not invincible, but he can be resourceful when he no longer finds joy in the battle ahead of him.
