Science Builds a Better Pie: NY Times Post

Yea, I know I'm almost a year late to this post but better late than never, right? I recently came across this great story when looking into the Science and Food series at UCLA.
I first came across Amy Rowat's work last year in my work as in events; we produce an event for UCLA's Jonsson Cancer Center Foundation and she was a featured researcher in the event's video. Fascinating stuff. And she has this amazing TedTalk about The Molecules We Eat. (Way to go, Amy, for bringing this high level science and molecular biology down to a level you or I can relate to!).
I digress, because let's get down to why I'm here: the PIE! Rowat teaches a class at UCLA on science and food and worked with the NY Times on a sweet little infographic and shares her insights into the science behind a better pie.
I learned first hand in my pro baking class how right she is; exact ingredients, leavening reactions. If science truly builds a better pie, then call me a budding scientist. I'm game to this practice.

I just posted about UCLA's Science & Food lecture series. I'm totally fascinated by it. Why didn't I get into this stuff while i was a student?!
Anyway, obviously pie is my thing. Last year they conducted an apple pie bake off.

Science, eh...It was never my forte. I enjoyed it and never got a bad grade, but science never came naturally to me. Math, english, theater. Those were my things. So the fact that I got into baking, pies specifically. is a bit of a surprise given scientific baking is when it comes down to it. And now, the science behind baking is a strong reason why I'm so into baking.
So with that in mind, a client/friend forwarded me a link to an upcoming Science & Food lecture series hosted by UCLA (my alma mater, go bruins!). They've been going on for several years now but of course my recent interest in baking make this quite an interesting find right now.
On June 1, they're hosting a lecture called Harnessing Creativity (and the Science of Pie). The listing states, "students of the Science & Food course will present the results of their apple pie projects, including their freshly baked pies in a large-scale pie tasting. The event will close with an Iron-Chef style discussion of the winning pies featuring the keynote speakers and renowned judges from the Los Angeles community."
Well, yes, I'll gladly be there! For the science AND the pie!

Pies and craft beer, many may ask what’s the correlation? Not only do the two share a similar place among our national past times, they were both heavily influenced by none other than Charlie Papazian.
National Pie Day was founded by Papazian in 1975, in a simple declaration to his kindergarten, first and second grade students that January 23, Charlie’s birthday, would be National Pie Day. After a quick formality National Pie Day was official, and pies became even more popular, particularly on Charlie’s desk.
As a pie romantic, Papazian researched and tested pie styles, at the same time and in the same manor as beer styles. Common flavors like chocolate, fruit, nuts and cream have been enjoyed alongside experiments as bold as minced Habanero. Craft beer, or pie? You be the judge.

Author and baker Beth Howard explains how a simple slice of homemade pie can serve as a catalyst for healing. After suffering a personal tragedy, Howard discovered a new sense of purpose and hope with her elbows deep in flour. For her, giving away pie is a metaphor for giving of yourself.
